When the éclairs are nearly done let the steam escape from a little opening of the oven. 5. When the éclairs are done poke their side with sticks to let the steam escape. 6. After turning off the oven let them stay in the oven for 10 mins. 7. Don't press the éclairs. 8. Convection oven is ideal for making éclairs I hope these tips help you!!
