I have been experimenting on chocolate base cake recipe for black forest cake these past 3 months for my dad birthday next month. I can't believe my own effort at this. But eh... Is this recipe create a rather dense texture, fudge like cake? Or, is this recipe create a light - sponge like cake? I've been trying to create a balanced birthday cake. What's with dark cherry in the middle, frosting and ganache. Too fudgey will make it too heavy to eat. Too light will make it just too airy. It's hard to find the right texture for the cake base.

There’s this chocolate shop making great small little chocolate cakes (much, much smaller than yours) that cost about like Us$30. Very expensive in local currency. Cakes are truly a luxury here. Come to China and open a bakery!!😜

Yes I did, make sure the cake pan is not in the water bath. Put the water bath at the bottom rack, and the cake pan in the middle rack.

Just wanted to know should the coffee be mixed in hot water ?
Off course the coffee has to be hot, otherwise the chocolate won't melt when coffee added.

Hi Micheal, could u please clarify the exact amount of coffee. 100gm/ ml. What is visible is some cubes of coffee akin to chocolate ones.
Add 1 to 2 tsp. instant coffee to 100 ml of hot water. 100ml of hot coffee is the same as 100g of hot coffee,

Rice flour is very different from cornstarch/flour. Anyway, you can try to replace it with cornstarch.
