Seems to be from French style. But he really should make traditional Italian food. Everybody knows he has the chops. So why does he do this? I liked Iron Chef Jeffrey Zakarian's style better. He gave up a lot of his techniques on The Kitchen, and I think he cooks more authentic Italian.
i went to his pizza place in london near thames , best pizza i ve ever got , nothing like this shown in the video and also pretty close to a napolitana . His margherita ironically was top notch
I've eaten all kinds of pizzas over the years. But the fresh basil, mozzarella and tomato 🇮🇹 ones made at home fresh out of the oven blow them all out of the water every time.
The combination of REAL fresh tomatoes, mozzarella and fresh basil is just the best for me, no matter if it's pizza or pasta, I can eat it all day, every day.

Today I learned you need fresh tomates instead of just some tomato sauce for the margherita, thank you! So I've probably never eaten a true margherita in my life. I'm glad my pizza dough making skills are okay, so I'm gonna make this experience myself.
Laughs aside... I'm glad Vincenzo is making these videos. As I follow Ramsey's, MPW, etc cooking recipes. I always thought them being Michelin star chefs they know what they are doing, so I was 100% confident their recipes were authentic. But after warching Vincenzo's videos for a few weeks, they haven't got a clue about Italian cooking. Real eye opener! Don't get me wrong, they are great chefs and most likely their biggest background is in French cooking. But some of their content is really irresponsible to be honest.

The framing in his video was always way to small so you couldn't see much, and he kept failing to mention quantities: very poor production. You called him rightfully out on this. I do like your reactions a lot, your positivity, even on the worst videos, always makes me smile.
Lots of incorrect pizza dough recipes online just like Gordon, I used to make pizza dough like that and I didn't know why my pizza crust is bland till I seriously researched and found out that I must slow and cold ferment or slow room temp, just like pizzarias.

You're perfectly correct, in my opinion there are much better people to watch, like ya say Vincenzo, great for the actual techniques. A great chef that I've learnt alot from and just isn't aswell know is Steve Dolby, really inspired me (used to hate cooking) Fantastic camera work, excellent commentary, his older recipes seem better than his newer ones though.
