Does unroasted make a difference, I have even seen just one being sold online as unfermented. Wonder if it has higher antixodants or the oppsite does the fermentation and roasting actually increase the bioavaiblility?

There is nothing on the Antler website about heavy metals or whether their products are third party tested for lead and cadmium. There can be unhealthy levels of lead and cadmium in raw cacao. Also, cacao grown in Africa has less lead and cadmium than cacao grown in South America.

As an indigenous person, I like to shop and eat indigenously, meaning I like my diet to be as close to the ancestors as realistically possible. so I'll be checking out that brand of cacao. I also have a good source that I get mailed in from Mexico every few months

Omg please please clear up the ‘Dutched’ processed organic cacao vs ‘non Dutched’ organic cacao for us all. I’ve been consuming a lot of organic 100% cacao powder and have recently read that Dutched cacao is processed with chemicals accepted by the FDA for organic use but those chemicals cause all the diseases that non Dutched cacao helps to rid us of. My Cacao does not state either and I’m worried about consuming it. Could you pleaaaaase do an episode on this issue. I think we are being taken advantage of by the system once again. If it’s true 😮then the Dutching process is weaponising a substance that on its own is soooo beneficial to us and has been for thousands of years. It’s criminal intent

I don't pour hot water over the raw cacao. I think pouring boiling water over it would not help. It would be like cooking it (turning cacao into cocoa). I put the cacao and raw sugar into the cup first. Then add cold raw milk to about half way and stir. Then lastly pour in the hot water slowly whilst still stirring it so then you're not hitting the cacao with that hot water on its own first up, it's buffered against the hot water by the cold milk. I think it tastes better putting the milk in before the hot water as well, seems to taste smoother. Or you could also turn off the kettle before it fully boils or do 50 50 cold and hot water. But the cold milk first is the way to go.
Cacao is the purest form and processed without heat keeping in all the nutrients and antioxidants whereas cocoa is roasted killing off almost all of its antioxidants and other nutrients and highly processed with chemicals or sugar or both.
Cacao products are often contaminated with lead and cadmium. Any supplier of cacao products should have their product regularly tested by an independent laboratory and the results available for consumers to review. Fetuses and children are especially susceptible to heavy metal poisoning.

In Peru you just have to be careful that it doesn't have traces of benzocaine used to cut the cocaine down in the labs

Possibly kidney stones or other kidney damage due to high amounts of oxalates. Not everyone is susceptible in the same way.
