The problem I have with a lot of food from that region is I am allergic to peanuts! so I have to be really careful when in a Vietnamese or Thai restaurant

We use a sharpening steel to keep ours sharp when filming, but you can use a standard blade sharpener if that's easier/more accessible! - Lee

Green means it's not yet ripe...but his own is over green...to young...
