Battens are a must does not matter about pitch of roof it's just good practice or about cost look at all the marks on the felt where the tiles have been sitting directly onto the felt also all the nail holes in the felt where you are fixing the tiles

Yes here in tx. I repaired a lot of tile valleys because they have leaves and junk in valleys they need to let water flow without going over edge of valley

Did you just said "don't use aluminum flashing for flat roof at around 3:31", but your worker just added silicon glue to the aluminum flashing...was the owner aware of this issue....the old flashing had caulking marks on the tile below the flashing.

No battens if you completely don't care. It lowers temperature allows airflow unparalleled wind resistance and extends underlayment 20 years. Worst advice ever.
