For as soon as they leave the nest, they start losing weight and their meat rapidly becomes way tougher. At that point, it is no longer squab, but pigeon. And pigeon is tough, you have to slow cook it in a roast or stew. Squab is super tender, Squab is essentially the "veal" of pigeon.
