      @@JuanPablo-lt3us For quality bred meat pigeons, it only takes 4 weeks from time of hatching to slaughter. You harvest squabs before they fledge the nest, as that is the heaviest they will ever be. For as soon as they leave the nest, they start losing weight and their meat rapidly becomes way tougher. At that point, it is no longer squab, but pigeon. And pigeon is tough, you have to slow cook it in a roast or stew. Squab is super tender, Squab is essentially the "veal" of pigeon.
