Roswaal was talking to Ram when he said he would offer the soul, his soul, to her. That's why she smiles as she falls forward. You're not suppose to know the particulars of that promise yet.
I don't blame you for being confused about what's going on with Emilia. Especially, since you guys theorized that Emilia was taken over by Satella last episode. A good theory, and quite possibly correct, however I have to point out that it's something that the show didn't outright state and only subtly implied. Here, Subaru and the show seem to be more so implying that Emilia went crazy trying to face the trial and her past. Since she no longer has an emotional anchor in Puck she's leaning on Subaru in a deranged and tragic way, just as Roswaal wanted. He also wants Subaru to make the choice to help her. The traumatic nature of Emilia's trial seems to be able to produce a chaotic variety of results even in different timelines. However, you can see the shadowy-purple in her eyes reminiscent of the Witch as her mind deteriorates here. I will bring up more about Roswaal in a later video if you don't understand by then. Also, good on the show for bringing back that loose-end with the Mabeast incident and little girl that never showed up again. You guys might've overlooked it, but it's actually quite significant. If Maylie was responsible for the whole mabeast attack and she and Elsa are working together, that means whoever hired Elsa to steal Emilia's insignia also hired Maylie to attack and has been plotting on us for a while. This "client" also knows a lot about their targets like about how Beatrice's magic works and needs to be confronted and taken out before we can be rid of these assassins.
It should be noted that in this episode it is 100% Emilia going crazy and the only thing that Satella is connected in for this episode of mental breakdown is that Emilia looks like Satella and therefore faces abuse for it. The purple hue on the eyes aren't meant to represent Satella

If you don't believe Emilia was that Witch, then how do you explain who that was and how she got there? How did she get inside the barrier and why did she never show up out there again?

And without Puck and Subaru to support her during the trial, Emilia kept attempting the trial and failing miserably until the mental pressure of being blamed for the snow and also from being accused/hated for supposedly being an evil witch, the feeling of being abandoned and the trauma of the trial got her mentally broken to the point where she went crazy and started to think that she wasn't able do anything without Subaru's support. That's why she was acting so weird. And when it comes to Roswaal, there's something important to clarify: It's widely implied that there's only two individuals that know about the existence of return by death in the world. One of them is supposedly Puck and the other is confirmed to be Roswaal. But each of them have different info: Puck knows that there's someone in the world that has the power to reset the world upon death but doesn't know the identity of such person. That's why she turns into that giant cat and freezes the entire world every time Emilia dies. Like in S1 episode 15. Because she knows that by killing everyone, that action would also be killing the person that has the power to return by death to reset the world and that way, Emilia will be alive again. And when it comes to Roswaal, (unlike Puck) he knows that it's Subaru the one that has the ability to return by death but what he doesn't know is how Subaru resets the world (but Puck does). Roswaal doesn't know that Subaru needs to die to reset the world. That's why in this episode he starts punching him and kicking him in an attempt to make him use his ability. Also, in case you were wondering, the only reason Subaru was able to survive the attack of the rabbits is because he ordered the pink haired elf clones to defend him (since he gained the authority to give them orders in the previous episodes). But even like that he still got badly injured. That's the only reason he was able to reach Emilia despite all the rabbits being there.

For Emilia, she thought Subaru abandoned her because she didnt receive the letter he left (a Ryuzu clone stole it last episode). When you consider that Puck left, and the villagers started hating her, people she just made friends with, it broke Emilia. Thats not all tho! Its shown that Garfiel forced Emilia to stay in the trial, she was constantly having to redo it. Meaning she was isolated and forced to face the trial repeatedly after being abandoned by the 2 people that she relied on. So her mental completely broke while she waited for Subaru. 3)While Roswaals goal is never told to us, he basically wants Subaru to “protect one special thing”. He wants Subaru to be just like him. Hes definitely insane, but he wants Subaru to have the same resolve as him. This is hinted at earlier, when Subaru said Beatrice would be his enemy, Roswaal said those were “strong words” and would need strong conviction to achieve it but that Subaru still had a “pained expression” on his face.

Anyone ever wondered why Elsa took his eye instead of going for his guts as usual? Elsa hates the look in Subaru's eyes. When people are near death, they either have a look of accepting death or wanting to fight death. But the look in Subaru's eyes seem to convey 'death is not the end'. Elsa hates that look because he reminds him of herself who can also come back from death.

Ros just know Subaru some how can "undo" everything but dont really know how it work, that's why he beat up Subaru to the ground and think it will trigger "that power" force him to "undo", Ros just simply follow everything the book say without question
One of the clues that Maylie (purple haired ma-beast controller) was not part of the villagers was that there was scene where Subaru was showing Rem why he wanted to save the kids so badly; he named each kid and what they wanted in their future. But the one kid that he didn’t name or know about was the purple haired girl. That must mean that she must have had come to that village fairly recently, or didn’t really interact much with the other kids. It was quite suspicious, but they did a good job of lowering our guard by never going back to addressing her mystery until now…
Also, yes, the snow is the cause of the bunnies showing up. It’s snow created by magic, it’s a huge spell, so since the rabbits are drawn by mana, they are drawn to this snowfall
I have to get this series credited for topping itself in brutalizing Subaru and the other characters. Just when I think it can't get more sicker. It does.
I'm kind of with Miss Sam when it comes to Roswaal. I get that he has a plot in the works, but he could have found a more peaceful and humane way to talk to Subaru. But give props for being devoured by the demonic bunnies like a champ.
