INGREDIENTS
▢12 medium sardines - - "Tamban" can be fresh or frozen
▢1 cup olives
▢5 big cloves garlic - - sliced
▢1 medium carrot - - cut into flower shapes
▢3 pieces bay leaves
▢10-12 pieces peppercorn
▢1/4 teaspoon chili flakes - or 2 pieces spicy chili - chopped
▢1 cup olive oil
▢1/2 tablespoon kosher salt
▢1 cup water - (or more)
▢1 tablespoon vinegar

Up to a week. :) But if you want to have your sardines lasting longer then you have to do a proper canning.

45 mins to an hour or until the liquids are reduced to half and only the oil is left. If you want fishbones to be tender, cook it for about 6 hours over very low heat, adding water as needed. You can also use pressure cooker and cook for an hour under pressure. :)

I'm from Barcelona and I've never heard of Spanish sardines. Generally we call these sardinas en conserva or sardinas de la botella en conserva. I didn't know that Spanish sardines exist. Which city is the origin? I'm sure it's not in Spain.
I think they are the same and are just called differently depending on country. :)

@@conversationclasses We Filipinos have a history of Spanish colonization for 300 years and a lot of our dishes were taught by the Spanish people including Spanish style sardines.
@@enireth6512 there's one specialty called Spanish omelette and also Spanish sausages and Spanish ham like jamón ibérico and jamón serrano.
since it was originated from spanish people not necessarily from spain, so it was called spanish sardines from other country, maybe to honor the origin

If you place it on a sealed bottle or jar po, and ilagat sa fridge, up to a week pwde. If longer, you have to do proper canning. Check my recipe for more info. 😊

You can use about 1 teaspoon pandan extract. The problem with cooking it fully is that it might turn mushy when you cook it further in latik syrup later-on. Cook it just a bit al dente so it can still absorb the latik syrup. :)

If to be consumed within some days to a week, just transfer them in a sterilized jar or container and place in the fridge. But if you want to have your sardines lasting longer then you have to do a proper canning.
There is the boiling water bath canning that can probably make it last for a month or so. If you are planning to sell commercially, please do a proper pressure canning using a pressure canner or cooker.

The procedure is great but I think garlic is not needed here. I have tried different kinds of Spanish sardines and I haven't seen or tasted garlic in them
I find it adds flavor to it and I love it. 😊 You can omit it if you want though.

I have not stored in jars myself so I can only tell you what I’ve read from those who did, if canned right it can last for up to 2 years.
