- This week, we're faced with a very particular challenge, the likes of which I never thought I'd have to face: batter-fried chicken. It sounds innocuous enough, but a cursory glimpse at any given recipe eschews batter in favor of a sturdier, more reliable flour-and-egg dredge. Thanks to our new kitchen producer (Kendall Beach), we concocted a formula for batter that wouldn't bulk up, wouldn't brown too quickly, and wouldn't crack in the unforgiving oil. The results are annoyingly difficult but undeniably fantastic fried chicken, made in (what I imagine is) the Pollos Hermanos style!

I love that the only initial direction Giancarlo (sic?) was given in his characterisation of Gus Fring was that "he's a nice man who sells chicken" and he decided to give the role an understated menace which persuaded them to develop the character further.

I made these today and it is just like it was described by Lalo. I simply love it. This should be sold on the streets I think. The seasoning mix is so flavorful I couldn't stop to smell it over and over again even the raw chicken smelled lovely. My family already told me to make it again. I really recommend to try this recipe out! You can not ruin it if you follow the recipe ;) The batter was not so fragile as I thought it would be based on the 'cons'. Just let it fry for a few minutes before gently turning them around.

Why is he acting like batter fried chicken is rare and unusual? It's how I've always done mine and it's common in the south.
For the spices being "more chilean", use a mix between chili flakes (between the 5000-8000 scoville units), smoked paprika and some coriander seeds, put them on a stove at low to mid heat for 5 minutes and grind them. You will get some "Merkén", which is a traditional chilean spice blend!

It's always a good idea to put spices on the stove in a dry skillet or in your case the oven for a little bit, it really helps release the aroma's.

I got an actual Binging sigh Babish ad and thought it was part of the video.
In 2012, I actually ate at the restaurant that was rebranded as “Los Pollos Hermanos” for Breaking Bad. The restaurants real name was “twisters” and is about 8 minutes from the Albuquerque HardRock Casino. They didn’t serve fried chicken though, but they did still have the Los Pollos Hermanos painted Logo on the walls inside. The place was a burger diner with a southwestern “twist”. I was stationed at Kirkland AFB in ABQ at the time and I wonder if it’s still open. If so, they really, really should start serving spicy fried chicken.
There's a Pollos Hermanos food truck that was planning to start up in Santa Fe. Might be delayed because of the pandemic though.

The whole idea surrounded Pollos Hermanos is CHICKEN!! If they don’t sell chicken there and all they have is a Pollos Hermanos logo in their store what’s the point?
@@Thedjsmokeybear the logo was added for the show. The restaurant was just a filming location; Los Pollos Hermanos was not a real restaurant at the time. Twister's was around for decades before Breaking Bad. All of Albuquerque has since incorporated BB references for tourism. You see artwork and such all over the place now.
