Same here. I was invited to a Private Event at Difara around 2012 it was 15 people and for 3 hours. We had him make us calzones and all we could eat and drink included. Very cool experience and Dom at his slow and steady pace took care of us all. THE BEST Pizza spot in the world...
Hey when I used to go here, and order the Sicilian Pepperoni pie when Dom personally made it, it was pizza nirvana. It was a life changing experience. However, more recently, other people in the kitchen would make a less than ideal version, and I think that’s what you experienced. But when Dom made it, man it was sublime. I will go back to get the traditional slice and see if that compares to Dom’s version. But he had the Midas touch when it came to pizza. The best I’ve had in my lifetime for sure.
Man, I loved Dom (and his wife? maybe his sister, not sure to be honest and it's been 20+ years since I ate there last sadly). Super down to earth and he churned out pizza like a machine back then. This place and Spumoni Gardens - I'll never forget them, ever.
Di Faro uses grana padano and not Parmigiano Reggiano to grate; grana padano is less expensive but still excellent, with a bit less saltiness and depth of flavor. Bought in bulk, it is freshly grated over the course of the day there. Back when Di Fara was first operating, the price difference between those two cheeses was massive -- almost all first generation Italians were buying grana padano to save money without much loss in quality. The price difference is smaller now, but grana padano still keeps the costs down. I was lucky enough to go to Di Faro was the OG, Dom, was still making every pizza; he delegated prep for the sauce and cheese to family but he cooked every pizza himself. RIP Dom. Back the, he cut the fresh basil with scissors (very traditional; my Italian mother-in-law does it that way), and dropped pieces of basil on the pie after he removed the pizza out of the oven. That basil looks like it was placed on pizza before it went in the oven, which is unfortunate, because doing it at the ends gently wants the basil while keeping the taste and texture fresh. Also, the square pizza was substantially better than when you were served.
Yes, Dom used to cut the basil leaves off the plant from a clay pot on the windowsill and sprinkle them over the freshly made pie before serving it to you. Amazing
The basil was freshly put onto it aswell, you can even see it in the video. I just absorbed the oil and olive oil. :0 The pizza still looks great, RIP Dom tho
I first had Difara maybe 15 years ago. I waited about 30 min for 2 slices and when the girl at the counter called my name she said $10. It was absolutely the best pizza that I have had. It isnt quite the same since Dom passed My favorite is the original Patsy's on 1st/118th, have had hundreds of slices from there. I think John's bleeker is the best in NYC.
Perhaps the other slices were better when Dom was still running the ship! John's of Bleecker street is great though it's not really a slice place and is more sit down
I grew up in the Midwood area and all we knew as 10 year olds in the mid 70s was that there was this place on Avenue J and E. 16th that had really good pizza. We used to go there all the time after school. Little did we know that one day it would be the GREAT DI FARA'S

UA, coming from a Brooklynite who moved to Connecticut and still can’t find good pizza up here (well, the appiza in New Haven comes sort of close) , Sicilian pizza was never the slice of choice bc it was too doughy and square. Napolitano was the way to go! But now I need to add Di Fara to my next “family tour of Brooklyn!” Thank you for schlepping to Midwood!
The challenge was the pepperoni Sicilian and the pepperoni slice sat there while you finished the review. So the integrity broke down. Sicilian are supposed to be thick and mealy. You should have taken a bite of each 1 after the other and did the review. I do agree that this is the #1 pizza hands down anywhere. The price is that way, because it's not cheap ingredients. You pay for quality. Industry and others like Best and Lucali are just hipster versions of Dom's masterpiece. His family has kept the legacy going! Great job trying the #1 pizza
The pizza was better when Dom was making it. I haven't been there in a while but the square, plain slice used to be the best. Every ingredient, down to the dough, is imported from Italy. It's why it's so good.

Not too long ago a Difara Pizza started showing up in NJ supermarket (ShopRite) in frozen section. Above average for supermarket pizza! Wonder if there's a connection? Retail price $10 but it goes on sale for $5 often which is a great buy.

Some family members opened a Di Fara in Cary, North Carolina. I was so excited to try it and although their sheet pizza or square slices were better, the overall experience and pizza is subpar. Also very expensive. Guess I need to make a trip to NY!
Ya, the water and dough is better in NYC which apparently is why NYC has the best pizza . Never knew how real that was but I lived in NYC and tons good spots unlike any place in the US IMO . 👍
The water in central North Carolina is very good soft water. I don't think that's the reason the Di Fara there isn't as good. Even within NYC, I find that the expansion restaurant locations generally don't live up to the original.
Vegas location is the most expensive in the city which is crazy. Happy Hour half off though so it's more manageable. I had pizza monzu yesterday and it was great. Expensive for Roman style but great

Difara's is the best pizza I've ever tasted in my life !! I lived in Vegas for 23 years and their Dom Demarco's Sicilian pepperoni pizza is called the Difara .it's cooked well done ,crispy and so delicious !! 💯😍🔥💖💖💖🍕
@uaeats Yes ,actually the Difara restaurant is called DomDeMarco's in the Northwest part of town and in Ceasar's food court they have one walk up . I've always eaten at Dom's, the food is excellent.

I think you needed to try the DiFara Square which comes with sausage and onions if I remember correctly. Great place. Always grab a slice when in the area.

I grew up in Brooklyn and some extended family too. i never heard of DiFara. Our parents drove all over Brooklyn. I heard of DiFara on yt above 3 years ago. Sunset Pizza in staten island ny has a great penne vodka pizza.
I remember going here in February 2016 before the Beach boys concert at the Kings Theatre in Brooklyn. Dom was making the pizza. It was the best pizza I ever had amazing crust crust was a magical crust that’s all I could say about it. The sauce, the cheese and the olive oil and the fresh basil the most amazing pizza I ever had. I went back and got another full piece went Dom wasn’t there his making pizza it was very good, but not quite as good. The last time I win when Dom was still there, but getting older andmoving slower disappointment. But I definitely agree with UA The plain cheese slice is the best to get because the reason being that the crust is so thin it’s too loaded down when you add on toppings. In February 2016 I got a whole pie that made a big difference. It was amazing.
DiFara is the best plain slice I've had up until now. We go the slices plain. The pepperoni square we got a whole pie and it was wayyyy overcooked (aka burnt). This was 2-3 years ago. Pizza time right up the block is a sleeper. Great pizza as well. This neighborhood is lucky.
Top 3 NYC pizzas for me are Lucali, John’s of Bleecker, and L’Industrie. Honorable mentions to Paulie Gee’s Slice Shop, Scarr’s, Best, and Mama’s Too. Haven’t been to DiFara’s yet though. Mama’s Too has an outstanding square slice, and Fini has an insane white slice and that’s coming from someone who never goes for the white slice. Pro tip is to douse that white slice with lemon.
Really like your 3. One of the guys from lindustrie opened his own place in West Hempstead....Dario's. It is excellent Love The Best, think Paulie Gee was meh, Scarrs was really good, never had Mama's Too
Hi UA, just to let you know the square thick slice of pizza that you ordered is known as a "Sicilian" slice of pizza. Not all pizza places offer a Sicilian slice. Usually order a Sicilian slice like that when you are really really hungry because of the extra dough fills you up quicker.

I had the complete opposite experience. Plain slice was amazing, but not worth the hype and wait. The square on the other hand was the best pizza I've ever had. Crunchy, oily, loaded with texture. Truly unique and simply the GOAT.

Pepperoni is probably from ezzo from my town Columbus, Ohio….most of the top places nationwide use ezzo pepperoni….if you’re ever in Columbus please try Columbus-style pizza….yep it’s a thing!
They need to pre-cook the pepperoni and put them on after the pizza cooks. Preserving the structural integrity of their pizza should be paramount. Liked as usual!
Again great review UA! Had Di Fara ways back - it was very good! However it looks like they didn't put any money back into the property since the opening in 1965!!! In total disrepair on the outside and super grimy on the inside!!! Absolutely appalling!!!
I've had the pizza made by Dom and I would agree that it WAS the best Pizza in many ways. But I went a few times after he passed and sadly the slices I had were all a disappointment. The longest I waited was 2 hours for 2 slices back in the day. It was that good. Maybe If I'm in the area I'll try again.
You should diversify more.there are so many ethnic restaurants in the n.y area Italian, french ,spainish greek etc .enough with pizza ! Your in n.j like me you can get really great pizza in n.j without traveling 2 hours.try the Spanish restaurants in Newark for a change!
Probably shoulda started with the Pepperoni first and then gone to the cheese. wouldn't have been as soogy whereas the Cheese one woulda held up (tho your complaints have weight)

It's nothing like it was when Dom was alive. There are other Dom Demarcos out there. Andrew Bellucis pizza in Astoria is actually better than DiFara.

Good job ua you experienced what every pizza expert calls the best pizza! Its good that the quality hasnt slipped since dom went to pizza heaven.
It lived up to the hype and more for me! It's not common when a place does that.
I remember going there and it was not always consistent. Sometimes the calzone would be too salty, for example.
For great square pizza in Brooklyn, I recommend Armando’s in Canarsie. On Rockaway Parkway, next door to the L Train Station.

I remember going here in February 2016 before the Beach boys concert at the Kings Theatre in Brooklyn. Dom was making the pizza. It was the best pizza I ever had amazing crust crust was a magical crust that’s all I could say about it. The sauce, the cheese and the olive oil and the fresh basil the most amazing pizza I ever had. I went back and got another full piece went Dom wasn’t there his making pizza it was very good, but not quite as good. The last time I win when Dom was still there, but getting older andmoving slower disappointment.
But I definitely agree with UA The plain cheese slice is the best to get because the reason being that the crust is so thin it’s too loaded down when you add on toppings. In February 2016 I got a whole pie that made a big difference. It was amazing.
DiFara is the best plain slice I've had up until now. We go the slices plain. The pepperoni square we got a whole pie and it was wayyyy overcooked (aka burnt). This was 2-3 years ago. Pizza time right up the block is a sleeper. Great pizza as well. This neighborhood is lucky.

Top 3 NYC pizzas for me are Lucali, John’s of Bleecker, and L’Industrie. Honorable mentions to Paulie Gee’s Slice Shop, Scarr’s, Best, and Mama’s Too. Haven’t been to DiFara’s yet though. Mama’s Too has an outstanding square slice, and Fini has an insane white slice and that’s coming from someone who never goes for the white slice. Pro tip is to douse that white slice with lemon.

I once ordered Di Fara's pizza frozen through Goldbelly delivery. It was really good. I can only imagine how good it is fresh.
Hi UA, just to let you know the square thick slice of pizza that you ordered is known as a "Sicilian" slice of pizza. Not all pizza places offer a Sicilian slice. Usually order a Sicilian slice like that when you are really really hungry because of the extra dough fills you up quicker.
I agree that the plain slice is the best pizza I have ever had. Too bad I live in Florida. I will definitely go back to brooklyn to eat there the next time I am in New York.

I wonder is most pizza stores does thin slice due to inflation. Save on sauce & dough. Domino's chain is doing the same on regular. I like Costco. Price & thick.
I had the complete opposite experience. Plain slice was amazing, but not worth the hype and wait.
The square on the other hand was the best pizza I've ever had. Crunchy, oily, loaded with texture. Truly unique and simply the GOAT.

Pepperoni is probably from ezzo from my town Columbus, Ohio….most of the top places nationwide use ezzo pepperoni….if you’re ever in Columbus please try Columbus-style pizza….yep it’s a thing!

They need to pre-cook the pepperoni and put them on after the pizza cooks. Preserving the structural integrity of their pizza should be paramount. Liked as usual!

Again great review UA! Had Di Fara ways back - it was very good! However it looks like they didn't put any money back into the property since the opening in 1965!!! In total disrepair on the outside and super grimy on the inside!!! Absolutely appalling!!!
I've had the pizza made by Dom and I would agree that it WAS the best Pizza in many ways. But I went a few times after he passed and sadly the slices I had were all a disappointment. The longest I waited was 2 hours for 2 slices back in the day. It was that good. Maybe If I'm in the area I'll try again.

You should diversify more.there are so many ethnic restaurants in the n.y area Italian, french ,spainish greek etc .enough with pizza !
Your in n.j like me you can get really great pizza in n.j without traveling 2 hours.try the Spanish restaurants in Newark for a change!

Probably shoulda started with the Pepperoni first and then gone to the cheese. wouldn't have been as soogy whereas the Cheese one woulda held up (tho your complaints have weight)
