Metal utensil in metal pots and pans=metal taste. This makes so much sense and explains why wooden utensils exists
Do beef cheeks shrink that much in cooking? I have several I plan on making but they are huge so I was going to cut them in half but, if they reduce in size that much during the braise, I might serve one cheek per person

It doesn’t really matter. I’d use unsalted butter and adjust the seasoning of the glaze!

Ask your butcher, they will often keep some frozen or if they happen to have fresh even better

People remove the skin as they hold dirt from being in the soil
