Transports us back to Jerez & the Cádiz region, our happy place.
It won the Instagram poll (just), & is the basis for this dish and also the next video... which will all be about paella (it’s history/origins/misconceptions, and what makes an exceptional one).
Tonight’s video though goes through braising ox cheek, then pairing a dirty but luxurious potato dish with it, & cavolo nero for a blustery rainy Thursday night dinner.
