I am not a good cook, but I just cooked this. Didn't have polenta so used rice to accompany. I am posting this after a first taste. First reaction? "Somebody made this!" It is so efin' delicious, I could hardly believe that it was me. Thank you Ms Hartnettt for such a winner. Next time, polenta: Promise.

One of the best kept cooking secrets is that chicken stock makes beef taste much beefier than beef stock.

Beef stock tends to overpower stews and dishes, chicken stock gives a more well-rounded profile to the dish.
