Ginger works really well with tomatoes, especially fresh tomatoes. They tone each other down and knock out a lot of the acidity and heat and really bring out the natural sweetness. In my experience at least. Canned tomatoes need a little bit more work though since those are very acidic alone.

You are absolutely correct. If the Italian can provide necessary ingredients to all the people in different parts of the world. And maybe because of taste preference. I am a Filipino and Filipino style spaghetti is the best version of spaghetti for me. That is why there is a word about globalization, I don't like Italian spaghetti because it's too sour for me, maybe because of the tomatoes 😢, sorry

If you see cooking as self care, considering that most store bought foods would have lots of salt,sugar and oil etc , Spending 30 - 60minutes cooking and cleaning is not a big deal considering we spend more than that time on things that don't matter on the long run. Some spend that same time on a queue in a fast food shop or waiting for the delivery person or even walking or driving to the restaurant. Meal prepping also goes a long way to save time I work full time, have kids and cook everyday. Is it hard? yes, but I have chosen my hard.

So similar to masala pasta i make at home here in india. And i love the texture too! Most of the time, i keep it simple like you. Its equally delicious and amazing! This might not be authentic italian spaghetti and i apologise for that but my family just loves it this way😅
This reminds me of my aunts spaghetti, as kids the adults always made the Ethiopian food spicy..but we still had to consume all the same ingredients. My aunt would make us a tomato sauce with red onion, garlic, ginger and berbere (Ethiopian pepper). We ate it until we were old enough to eat injera and handle real spice..to this day I sometimes crave the taste of injera and her pasta. we’d have our pasta and use injera to pick it up..unless the parents were super Americanized didnt care for their kids to eat with injera. Our parents didn’t play that! 😅Some restaurants in Ethiopia will serve pasta this way too, from Italy’s short influence in Ethiopia we secretly love pasta..we will just never tell Italy that! 😆🫶🏽🇪🇹
