Yes! Using Silver Promfret to cook this assam sauce is a bit waste for the fish which of course best steam with light soy sauce, toppings fried garlic, parsley and green onion. Make me feel I would opt to buy 2 fishes together, use golden Promfret (a similar version of silver Promfret) to cook this assam fish and reserve the silver steam
Torch ginger (bunga kantan)..but normally we Malaysians put both Vietnamese coriander (kesum leaves/cendehom leaves)..but if cannot find both, ONE of them MUST be present, otherwise you won't get the iconic asam pedas aroma and flavor..still, if you don't have both, just go ahead and cook without the herbs, what to do? Haha!

If you don't saute the chili paste and use just 5-6 pieces of dried chili, it becomes asam rebus (not asam pedas) but delicious too

Normally assam pedas uses galangal root or lengkuas instead of ginger
Should put more onionsn omit the ginger n grind the serai tog
