    Not an expert, just what I heard about ikejime , and it sounds very logical. Nerve tissue and muscles contain ATP, which is used as a neurotransmitter agent. When ATP is "used" in the muscle it breaks down to several compounds including lactic acid and ammonia. You don't have to be a scientist to see how those two biproducts left in the muscle can affect tissue quality. If you just bump and bleed the fish some residual nerve activity may still be happening while the fish slowly bleeds to death while still breaking down ATP. If you sever the main "conductor" you're essentially stopping the ATP decay in its tracks, thus preventing ammonia and lactic acid from contaminating the flesh. Does this make sense?

      This would effect raw long term storage in a freezer as well. I have some thresher steaks in my freezer that have been there a couple years. After 18 months they became pretty inedible because the muscle tissue continues degrading even when frozen (a property of cold blooded proteins?!) and has a strong urine (ammonia) smell. I've been using the steaks as cut bait and in crab nets. The urine scent seems to attract the crabs.

      Just want to make a few things clear re. ATP, neurotransmission, and rigor mortis. ATP can act as a neurotransmitter in the central as well as peripheral nervous system. It plays a role in sensory neurotransmission by binding to receptors in various compartments. ATP has a number of receptors which can be targeted pharmacologically with drugs to treat blood clotting; numerous clinical trials are underway in cyctic fibrosis, inflammation, pain, and arthritis. By inserting a wire into the intrathecal space (that contains the spinal cord) you are mechanically activating descending motor neurons in the cord that synapse on muscle fibers in the body of the fish that utilize excitatory neurotransmitters such as ACh and glutamate. Hence the twitching. Back to ATP - after binding to it's receptor during neurotransmission ATP is NOT broken down into lactic acid and/or ammonia - it is converted to ADP then AMP, then adnosine or inosine. Re. rigor mortis, muscles need ATP to function properly and when breathing stops organisms cannot recycle ADP to ATP and muscles go into rigor. During rigor glycogen in the muscles breaks down and leads to accumulation of lactate and a fall in pH (more acidic). This is unrelated to ATP, poking a wire into the spinal cord, or the like. Credentials: PhD in Neuroscience, MS in physiology, endocrinology, neurobiology; can't catch fish for shit!

    Dude - I just cleaned, and cooked my first fish today. I fish lakes so it was just a couple pound bass. I may have also cried for a few minutes after I bonked and killed it lol. BUT I DID IT. Your videos got me fishing last year so thank you!

Here is another; I was night fishing for steelhead, pulling plugs I would troll a section, then zip back up to the top of the hole to do the same section of river again. After a few times of doing this, I got to the top of the hole, looked down, and my entire set up was gone, plug and every inch of line. I had left my gear in the water and when I got on plane stripped everything off. Luckily I kept the rod and reel.
      p.s. I wont give the details of when I planed off with the kicker motor down.

    The process you did for Ikejime was great. It doesn't stop the fish from stiffening up after it gets cold. But, it does soften up the tissue right after you cord it, stopping the lactic acid from spreading and delaying rigormortis which helps the shelf life in a fridge for much longer. Producing more umami flavors from the fish.

    Excellent content as always! I believe the main part or rather the structure below the actual spinal cord is the centrum or vertebral body of the vertebrae…it is a support structure that makes up the bulk of each vertebrae. So just above that (where you stick the wire in) is indeed the actual spinal cord which is basically destroyed by the wire, ceasing all nerve function. I think rigor mortis sets in no matter what you do because it depends on the levels of ATP and the calcium ions in the muscles of the fish….as they deplete through time, the muscle become locked in a contracted position via particular biochemical pathways (to extensive to post here lol). However, I believe the ikejime technique delays the onset of rigor mortis, so perhaps the freshness of the meat seems to last longer before actual decomposition begins.

    Doctor here. You're inserting the wire into the spinal canal where the spinal cord runs through. When you pointed and said "the spinal cord is right there" at 8:51 is actually the fish equivalent of the vertebral body. The spinal cord is just north/dorsal to your finger tip (where the wire went through). When you run the wire into the canal where the spinal cord rests, you're basically agitating all the nerve fibers which causes the muscles to contract randomly. Rigor mortis is also a cellular event when all the calcium gets released inside the muscles which causes the muscle fibers to contract. This gives the fish a stiff appearance and feeling. So yeah, these are two separate things. Still really cool to see lol. Big fan of you Matt! Keep up the awesome vids!!

      @@chir0pter It's a great question and I cannot speak from experience. But because it's a technique that has probably existed for a long time, it probably means ikejime has had a favorable impact of the quality/taste of the fish meat. If I had to make an educated guess... severing the fish head from the spinal cord still leaves the autonomic nervous system intact from the spinal cord. This means signals from the spinal cord can still cause the muscles to contract and use up the remaining energy/ATP in the muscles. When the energy sources are depleted, this can then cause the muscles to breakdown, resulting in lower quality meat. So if you destroy the spinal cord early on, then the muscles won't break down as quickly to give you better tasting fish. Just my thoughts... lol I hope I'm not too far off from the real reasons.

    i recall telling you about running a line up the cord back a year or so ago. It immediately stops all the nerves that rot a fish from inside . works better with stiffer cord from the tail. same technique half cut. awsome Bro !

    That was pretty cool to see as you were inserting the wire into the fish you could see the body twitching lower and lower (from the shimmer on the scales) as the wire went deeper and deeper.     I think technically what you're doing is called shinkei jime. Ike jime also involves spiking the brain so that cortisol and lactic acid don't build up in the muscles from stress.
    I would spike the brain, bleed it out then shinkei jime.

    I personally found those Chinese thin steel skewers works very well as an Shinkeijime “wire” with smaller fish such as flounder and such. I have also modded a water dental flosser with an extra glue needle and syringe for tsumoto-shiki shinkeijime but it needs to be refined to a point that it can with stand a strong enough water pressure for larger fish such as halibut or salmon.

    I always love your videos, and I really appreciate how real and authentic you keep it.
    Ikejime (ee kay jee may) is used to kill the fish as well as improve the quality of the meat. I like to go through the tail, shove the wire up as far as it goes, and go back and forth a bunch of times. At least until the muscle spasms stop. Between the ikejime and bleeding the fish afterwards, the meat will taste much better. You should do another ikejime test, but this time eat sashimi cuts from each fish so you don’t have anything altering the flavor. You will find the fish that had ikejime will taste much better.
    As far as rigor mortis goes, it tends to start a few hours after death and goes on for 10-13 hours. The only way to avoid rigor mortis is to subject the body to electrical stimulation for long enough to work (I can’t remember what the compound is called) out of the body.

    You need a stiffer wire. Not so flexible. Also when you do ikejime, you should cut and expose the spine on the tail side as well. Awesome vids, love this life!! Yeeeee!

    Cool video bro. I’m from New Zealand, love my fishing and eat most my fish as sashimi. I also break the spinal cord with the same method. Just wanted to say you can use a bit strong trace to do it as well (80 lb+). Using trace just means I don’t have to add wire in my fishing kit 👍👍

    We have done this to yellowfin tuna where I’m at…it stops the nervous system and stops the lactic acid from permiating the flesh…it works but you’re also opening a channel through the fish for bacteria also…thus limiting quality shelf life if kept whole…

    Down here in Long Beach, CA we have a boat towing service that you can buy insurance for. It costs from about $60 to a few hundred dollars annually depending on the level of coverage you choose. West Marine sells it. I don't know if they have franchises up there though. I often see their boats "Tow Boat USA" when I go out on my yak.

    Ike-Jime (live killing/'closing' roughly translating) is the technique used to kill fish and bleed out the fish. The technique in the video is called Shinkei-Nuki (nerve pulling) which destroys the nerve going down the spine to prevent additional degradation of the meat. I've seen commercial boats use compressed air to blow the nerve out of the fish in one shot for porgy.
    Shinkei-nuki will delay the stiffing process but will not stop it. Though delaying it will still result in fresher meat.

    Yes, on the liver. Ankimo or monk fish liver I order all the time if it is on the menu board. King salmon liver is a bit milder but heck yeah. Sublime taste pairing with sea grapes then a shot of cold Nigiri unfiltered sake.

    Its the cold that does that sometimes. It works best if you make a slurry and submerge the whole fish. Also helps to have a cooler where the fish lays flat.

      i noticed this keeping drinks cold in a cooler as well - better an ice bath than just ice to get something cold. water is a much better thermal conductor than air.

    The Ike Jime has worked on every rockfish I have ever performed on. To be honest I’ve never tried it on a salmon!
    Also Ike Jime does make the fish/more firm and takes a day or two to relax. Nothing like the rigor mortis stiffness that you get when you just throw fish on the ice

    Rigor mortis is caused when the ATP consumin proteins in the muscle (Myosin) bind to the actin filaments, locking the muscle down. This happens when the tissue runs out of ATP, which will happen whether or not you pith the spine. Decreasing neural impulses using the spinal pith may delay this a bit by reducing contractions in the muscle, but probably not by a whole lot. When the heart stops beating and tissue is not oxygenated, ATP production starts to shut down.

    Used to do that in the slaughter house on the cattle once shot with captive bolt had a 4ft long wound spring about 5mm in diameter shove it down to break the spinal cord helps as you have shown to get cleaner meat as the involuntary spasms push blood out too.

    Afaik it doesn't prevent rigor mortis but it slows down the onset compared to normal bonk + bleed. Main benefit is as already posted; less waste chemicals accumulating in the flesh means better taste. Also as far as I can tell the ideal wire is 16-20ish gauge stainless steel memory wire, it's readily available for jewelry making.

    The fishermen in Japan always do ikejime for prized fish as it lets them age the fish in the refridgerator for up to 2 weeks. Many dont eat fish like seabream raw and always let it age.

    Rigor will probably happen either way as it’s a biomolecular process, it has to do with depletion of ATP at a cellular level in the muscles - crossbridges between muscles fibers actually require energy to disengage and when the body ‘relaxes’ it is actually because down the road the muscle cells actually start to breakdown directly and the crossbridges denature. The technique is more intended to reduce continued twitching which may cause more buildup of lactic acid and alter the flavor profile. At least in theory.
    Just my two cents.

    Great fishing and perfect size for those salmon. Personally, it does not make much difference, perhaps when your making sushi to run wire down the spine. The meat is more relaxed.

    This worries me. You should not be out there alone. You know the drill.
    Still, I love your videos, you do an excellent job. If my accountant hadn't stood on his desk and screamed at me I would've bought a twin volvo engined Otis hulled schooner in 86. Almost. Now I have a great life on a farm with 4 great grown kids. But no saltwater.

    Hey mate, knock your engine into neutral when you hook up. You no longer have your kill switch on and if you got tangled up or lost your footing while hanging over the edge pulling in a fish you could go over. A mile out and you'd watch your boat motor away..

    Not sure about king salmon, but with Atlantic salmon and other fish with small scales, you can cook the fish with scales on. It makes the skin go crispy. It's kinda like crackling on roast pork. Cook the fish about 80% on the skin side the finish it off on the flesh side. For some fish, it makes it taste better, for others you wouldn't notice. But it's surely better than having to scale it. Worth a try anyway.

    As a Chef I’ve seen many Asian Chefs do that with the wire in the spine but I’ve never personally done it. I was thinking that on the fish that was icky-jimied I think it was the cold ice that stiffened him up. Just my thought.

    Ive heard at least with trout you want to keep the head on all the way thru the cooking process.. when you cut thru the spine it releases a chemical into the fish which will effect the taste of the fish...i have kept the head on now for the last 3-4 years and i do see some taste diffrence ..it does taste better although it still tastes like fish it looses im not sure if its the after taste or just takes some of the bite off it but it definatly takes some of the muddy flavor out of the fish if you fish in areas where the mud is an issue and it does make a diffrence

    Rigor mortis is a chemical process in the muscles. There is no way to stop it from happening, it starts when there is no more oxygen supplied to the muscles. If I ever get to the west coast I will look you up. I'd love to go crabbing!

    Rigor Mortis sets in if there is no more ATP left (cellular respiration stopped bc of no oxygen). Therefore it doesnt make a difference if you do the ikejime or not. Its the absence of oxygen -> no more ATP that causes RM, not something related to the nerves. ATP is used to relax muscles so the lack of ATP causes the muscles to cramp (RM).

    Writing from Japan. Ikejime 活け締め(いけじめ)basically means live death. You need to do it immediately after catching. No bonks.
