That isn't true regarding the size of the leg. Some breeds are just larger. The "lamby" flavor comes from lanolin in the fat...so that's why older animals tend to have more of a lamby flavor...they have more fat. If you really want lamb to be mild and tender buy grass fed lamb direct from the farmer.
I must just not live in an area of the US where you a actually have a choice between bone in of deboned leg of lamb. Leg of lamb has always had a bone in it, I can imagine any reason why you want the bone in there.
