3 Delicious 1-Pan Meals for Fall and Winter

- 3 whole food meals I made this week for my family. Inspired by winter veggies such as Delicate Squash, Butternut Squash and Sweet Potato.
Ingredients:
Sausage and Sweet Potato Skillet:
1 sweet potato
1 onion
1 green apple
1/2 - 1lb Italian sausage
2T oil
1T butter
Handful of spinach
Fresh Thyme, Rosemary, Sage (abt. 1tsp each)
Salt and pepper to taste
1tsp dried oregano

Cinnamon, coconut milk curry:
1 onion
1/2 butternut squash (peeled & cubed)
1/2 cup chopped cauliflower -
1/2 zucchini
1-2 T coconut oil
1 tsp cumin
1 tsp coriander
3-4 cloves of garlic
1 inch grated ginger root
2 tsp cinnamon
1 cup chicken stock
1 can coconut milk
2 small filets of fish (steelhead trout used in video)
Handful of spinach
Salt and pepper to taste
Garish with green onion
Squash and Cheddar Bake:
1 delicate squash
2 leeks (about a cup to cup and half)
6-8 mushrooms (about a cup to cup and half)
1 can cannellini beans
2 tsp fresh rosemary
3 stems of fresh thyme
4 cloves of garlic
2T oil
Salt and pepper to taste
Bread crumbs seasoned with oil, pepper and herbs
Sprinkle of cheese on top
CHEDDAR SAUCE:
2T butter
2T flour
1 to 1.4 cups of milk
1 cup of cheddar cheese (grated)
1 tsp dijon mustard
pinch of salt

I actually do not. But now that you mention it, I should develop one. I remember eating it as a child, and it was always good.
