    OK we made this about 6 months ago and put the bottles in the fridge. We did not use sugar. We soaked glutinous rice over night and steamed the next day after it cooled I put the yeast balls, after about one week I added 1.5 liter of water for every kilo of rice .after about 40days I strained the rice and squeezed all the liquid from the rice with a cloth. From 3 kilo of rice I got 8liter of wine. As I said before we put the bottles in the fridge. Now 6 months later we tested the taste. IT IS SPECTACULAR!!! perfect for celebrating the New Year! Happy New Year thank you!

      ​@@Spectacular-cuoredicioccolato Once I made sugarcane wine.After bottling, there was a blackish layer on the top side of wine. I think that was due to oxidation. My question is that how to avoid this as it affects the taste of wine too??

    My Rice Vinegar is still fermenting and I started the Banana Wine as of Today!!!

    In central China and Japan, people also make rice wine. We add a lot of jasmine flour cured in honey. We collect fresh jasmine and add them in honey for months until they are totally mixed. Then, mixing with the rice wine before fermentation (or after fermentation, I am not sure). It gives you a fantastic taste.

    I followed you 3 years ago. Learned how to make wine :) my friends and neighbors loved it. Only they would fall asleep in my home. Due, to corona I can’t get fruit so I said let me get rice wine so here I am again :)

    Hello again, Cuoredicioccolato, I am working on my rice wine already! At 10:29 you mention an important tip regarding sparklingness.     You can make sparkling wine from your homemade wine by adding a little sugar in the bottle before filling. Homemade beer makers sometimes use this technique to naturally carbonize their homemade beer. Then store/wait six weeks before serving. Research the correct amount of sugar to add, else your bottle could become over-carbonated and explode. If doing this method there will be residue yeast at the bottom of the bottle after six weeks. So pour carefully, and try to use smaller bottles like a beer bottle and share your wine. This method will not work using store-bought wine, cause there is usually no remaining yeast in a bottle of commercial store-bought wine.

    Quick question, when you put the wine in a glass bottle, do you have to keep releasing the CO2 pressure buildup?

      I made rice wine in last month... But used baking yeast instead of wine yeast. Is there any chance that methanol will be created in wine because of baking yeast? Will it be safe after 1.5 month to drink?

      You have a point there regarding quantity. However, if you multiply everything X5 you should be able to get everyone in your family _quite_ happy. I am starting small, more or less like Quore suggests, and them I am sure I will be making more. Cheers!

      This isn't real saki. He real.japanese rice wine doesn't have or has a special yeast added . This is simply using yeast to turn rice starches to alcolhol using yeast And there's alot better tasting sugars to ferment than rice sugars . The rice is used for the yeast and the sugars in real saki

Saki is higher alcolhol than the slop you made in the video . What youre making is sugar wash basically and I don't think I was talking to you at all brah . Why don't you make some real booze instead of instructing people on how to basically make an undrinkable mess ?

      Comparing the density before and after fermentation gives you an idea of the alcohol percentage.

      No risk, this fermentation produces ethanol, CO2 and that's about it. Only risk is, if you don't do it right, you may get a horrible wine that will go down the drain.

    I doubled the recipe and it has one more week to ferment until bottling. Cant wait to see how it turns out. I’ve made traditional Korean rice wine but it’s a little funky and sour for me. Hope this recipe turns out better. Thanks!

      I enjoyed a lot during the lockdown making crazy strong wines while others around me were craving for whisky and beer and buying them in black from the milkman. It just cost me the price of 200gm sugar and two handfuls of rice to make a bottle of wine. 😂😂😂

    Hello The Master,
    1. Bottoling the wine after 23 days we have to wait 15 days more, for what reason?
    2. And when to add sugar to make it sparkling before or after fermentation specifically you genious suggest please in how many days after actually and you said .5 sugar to what measurement ?
    3. Can we use ballon with holes instead of bubbler that you put in the mouth of the fermentator to emit carbondioxide?

    Fantastic demonstration Buddy, you make really beautiful videos, n inspire us too, I m the beginner just started it with ur rice wine and pineapple wine recipes, I have added bread Yeast due to lockdown, but next time I surely gonna add wild yeast just the way u showed in ur video, wanna ask u do we need to stir the mixture once in a day till 22 nd day, as to avoid the back pressure.....or just to keep it un stir just the way you showed in the video..... anyway thanks a lot for your beautiful videos.

      Hey Buddy, today my 22 nd day completed,so I bottled it n tasted in just a little bit n came out little sweet n it has good taste of alcohol,but due to instant yeast it smells little like bread, anyway I kept it for decanting for now another 15 days hope it will get clearer just like ur one.....it's my first attempt of wine making, no more use of instant yeast next time.... except smell of bread taste is good...... will update the progress after 15 days....thanks dear friend 👍🏼😊

      My pineapple wine is ready after bottling its 10 th day, I made it with bread Yeast n followed ur exact recipe. I tasted it came out nice it doesn't have the smell of bread as it was for rice wine, may be strong flavour of pineapple has over came flavour of bread😂😂 It has 6%ABV, I like it very much next try with wild Yeast for sure. I filled one bottle with 10grm of sugar let's see it turning in 🍾 champagne or not..... anyway thanks a lot for ur recipe.

    Love to use rice wine or sake for cooking all kinds of dishes..... it's great on marinated chicken or any fowl really ....... but a shot or two is great as well and even add a shot to a hug jug of Mexican HORCHATA " RICE AND CINNIMON DRINK " ITS REALLY GOOD .

    Sir, I feel 500 grams of sugar is too much for one liter of water. Because 1000 grams of sugar produces approximately 630 ml of Alcohol. Adding the sugar content of the rice, after the mixture will convert into alcohol either the alcohol content will become more than 50% v/v or the end product will become too sweet if the mixture will not get fully converted in to alcohol.
    Kindly clarify if 500 grams of sugar is too much. If not kindly explain.

    Hi cuoredicioccolato! I plan to make about 4L of water. So if I follow your recipe does it mean that I should use 1kg of rice and 2kg of sugar? Won't it be too much sugar for 4? Also, did you use sticky glutinous rice or just an ordinary rice?

    1.sir is bubbles move from bottom to up or not moving? bcz i followed your this recipe and after four days the bubbles forming but not moving up or down

    Which yeast should be used. Because when i had make ginger beer with local yeast available, after fermentation it smells stinky in nose. So is there any specific yeast i should use or any yeast will work? I loved ur toutrials. Thanx

Also plz tell do both of your alcohol recepie cooked rice and uncooked one.. how much differences were in taste and alcohol? And what should i do with the leftover rice?     I've just received my wine making starter kit and a bit of confused. In manual they warn with high possibility of contamination and they've included a sachet with some sulphuric staff... But in your videos I've never seen how you prepare your fermenters or bottles. Do you use special chemicals, like sulphites?

    Wonderful and easy to follow ! Tried this with the natural apple based yeast from your other video. It's been 2 weeks now. Tasted it and found it a bit too sweet. Can we dilute this water further to reduce the sweetness ?

    Hi. I did this recipe with a local rice variety. It came out nicely. Then I did a bigger batch. That has a problem. It is cloudy and also the flavour is like coconut toddy (yeasty). Can I do anything to have it recovered?

    The recipe calls for only 1 liter of water, most of which was absorbed by the rice overnight. Do we need to add any more water on top of the 1liter?

    Hi, firstly thanks for this easy receipt, i'd like to ask 2 questions.
    First is i can see just 1 litre water in ingredients so that in the end we'll have only 1 litre wine ? I m asking because there are 3 bottles at the end of video making much more than 1 liter. To make 4 litres should we multiply the ingredients x 4, i mean 1 kg rice, 4 litres water, 1 kg sugar etc.
    Second question is , some cider-makers drop hops in fermantater during fermantation or after fermantion completed and let them in for a few days more (dry hopping ), can we do similiar with this product ? maybe we can get something like beer with hopping and one or two sugar while bottleing.

      1) yes you have to multiply
      2) with the hops could be a rice beer, but I can't guarantee for the taste 😁

      I certainly wouldnt recommend adding hops. You can add a little rice to barley malt to make beer but all rice will not make a tastey beer.
      You can also make a good rice wine with rice and white grape juice.

    I have a question. After we add sugar to the boiling water, do we turn off the stove and soak the raw rice in the sugared water? Or do we continue to boil the rice in the sugared water?

    I'm not 100% clear on this, did you put the rice in, then keep the stove on until the morning, or turn it off right away and just let it cool/sit overnight for the water to absorb sugars from the rice?

    If I add sugar to bottles to make sparkle, could that cause fermentation to restart blowing cap off?

      Only if you don’t follow the instructions, but if you wait the end of the fermentation and you put only 8 g per liters

    Is it necessary to ferment it for 21-23 days ??? Its only 17 days but my wine has stopped showing any signs of activity...So can I go ahead and filter it for bottling ?

    i tried your sun dried tomatoes in olive oil with the basil , garlic , bay leaf , brother it was awesome. only thing it is better after a month. of soaking in the mix. you recommended 3 weeks,way better after a month.
