Thalipeeth finally getting the attention it deserves. Grateful to Chef Sanjyot for exploring it's potential. It's a healthy Maharashtrian recipe which is prepared in every Marathi household. So many varieties can be made with various vegetables like cucumber, cabbage or even an eggplant.
Here is another from our beloved Mahashtrian households ..... MISALPAV. It's so nice. And Puran poli comes out from them is outstanding though we Tamilians also prepare them. A month back one of my Maharashtraian friend brought poli made well dried to be eaten with hot tea to sustain for a month or so with groundnut filling instead of coconut, since she has brought it to Canada from her Mousi.😊 I am happy to say that I had lived in Mumbai for nearly 20 years and have shared cordial relationships with so many of them.

Traditionally bhajni flour for thalipeeth is prepared by dry roasting separately jawar, rice, chanadal or black chana, udid dal, moongdal, corriander seeds, cumin n methidana. The roasted ingredients are then mixed n ground. This can be stored for 2-3 months in airtight container. After that the flour starts losing the flavour so fresh flour can be prepared again. Alternatively, it can be made instantly as the chef has shown, by mixing ingredients. But thalipeeth made from bhajni (first method) is more flavourful. It is very tasty n healthy too. Even pizza can be made using thalipeeth as base.

आपने सही तरीके से बताया है,हम तो बच्चो को खिलाते समय इसमे सबजी भी मिलाते है या कभीकभी कच्चा प्याज बारीक काटकर मिलाते बहोत अच्छा लगता हैं ऐसा भी बनाकर देखिए अच्छा लगेगा

संज्योत भाई, सुपर्ब है । और भी अच्छी अच्छी डिशें दिखाते रहिए । हमारे घर के थालिपीठ में हम तीन चीज़ें अलग करते हैं - 1) थालिपीठ सीधे तवे पर ही लगाते हैं, यानि आटे के गोले को तवे पर रखकर ही उसे चपटा बनाते जाते हैं, कपडे-चकले का इस्तमाल नहीं करते । 2) शुरू में ढक्कन रखकर तेज़ आँच पर थालिपीठ पकाते हैं और ढक्कन निकालने के बाद आँच को मद्धम करते हैं । 3) पूरी रेसिपी में तेल का इस्तेमाल होता है, घी नहीं इस्तमाल होता है ।
