    Love making my own vinegars! Through the years, I have learned you can use not only apples, but also other fruits. One of my favorites would be raisin. I also use herbs, some flowers..my favorite being pansies😁

    I let my first ever appel vinegar sit for another 2 weeks as you do and I bottled the whole 7 liters today. A new few liters are on the way and since I had some plums laying around, I’m trying that too. I thank you forever. 💞

    I have all of my jars and PH strips from Christmas! I’m starting 4 gallons today from frozen scraps I saved from making apple cider. I just wanted to tell you your instructions are amazing and the time you put into this video from the video, written instructions, time jumping markers, etc is really phenomenal! Thank you!

    I worked at a restaurant in Philly ~30 yrs ago where we had a most extraordinary customer. He used to make vinegars out of some of the rarest and most phenomenal wines I had ever seen. He came very often, and was very generous w/me in allowing me to taste everything he did. One that stood out was made with a 1970 Chateau d'Yquem Sauternes - a very rare, expensive and delicious dessert wine. Thanks to him I was very familiar w/the best of the white Bordeaux dessert wines - but the vinegar he made from this one was literally life changing for me. To this day it sits in my memory as a frame of reference for how delicious a complex sweet/sour taste is possible to achieve.
    Store vinegar is typically 6% acidity - this was ~3.75 - 4 % (so very mild). We poured barely 1oz into tasting glasses and drank it in micro tiny sips. It was delicious the way true 20yr Balsamic Tradizionale is, but SO different. This was light fresh and not overly viscous, where (true) Balsamic is thick, resinous and a bit too cloying to drink much of. That night I made him seared foie gras w/the Sauternes vinegar drizzled on just as is. Of course I couldn't put out anything w/out tasting it also! Dr. Feinberg brought in the first white truffles I ever tasted and so many great dessert wines and Champagnes.
    He was also very generous in sharing very detailed info about his vinegar making process. Years later I did a deep dive into vinegar production from good dessert wines. I also read through the few existing patents I could find for commercial methods of production. The strategy we used was based on the principle that a home or restaurant kitchens are heavily populated by bacteria that would contaminate the target flavors. So we found a good source for starter culture and used that every time. We also did everything possible to speed up the process - the longer it was fermenting, the higher the propability that it would get contaminated.
    Eventually I came up w/my own process - based heavily on the Surface Culture / Generator process. My method used a (brand new) glass bong (no joke - a cannabis water pipe!!), a bunch of glass beads an aquarium pump, and a chamber of HEPA filtered air. If anyone is interested in details LMK - I'd love to see if it could be improved upon. I also have a list of references I found helpful (Sandor Katz's book "Wild Fermentation" was SO helpful. Great to see him so heavily referenced in this video).

    *lol* I started my ACV six days ago..
    It's an ..apple year, more fruit is branches, friends and I can handle,
    well, two buckets, roughly cut apples from three (2½) different trees = 12 liters, + 10 liters of water to cover the fruit (and 10 dl of sugar)
    I "cheat a little", had a too old "champagne-dry yeast",
    in previous years I've made wine, it won't be bubbly ACV :D , it just means that the yeast can "tolerate" higher alcohol content, which would otherwise ..kill the fermentation..
    I have a .." mother ", saved since 5-6 years, I usually let .." her dive and swim", when I strain the fruit,
    to get speed/start on the vinegar..
    The first time, I had ..forgotten the jar of "mother" in my ..root/wien cellar for two years, expecting something dry to wash out, but "she" was as ..slimy, like a jellyfish, that day "she" moved in there :O

    I’ve wanted to do fermenting for many years, but was afraid of feeding my family something that could harm them because I’d made something incorrectly.     I love making my own vinegars using all sorts of juices. My latest experiment was using a commercial pomegranate/cherry bottled juice. It’s bit on the expensive side, but the final product was spectacular. Unfortunately, it was so good that my grown children had to take some back home to their families. I only have 1 liter left from the gallon I made. I just put up another 2 half gallon ferments. The only thing you have to confirm is that the juice is only pasteurized and has no other additives (like preservatives). I add 1/8 cup of sugar per half gallon and transfer a well used mother that I started years ago (it is very active and I always keep it working on a new batch when a ferment completes). I use a huge amount of vinegar, so it’s a battle keeping my shelves stocked with a good variety. Love your videos. Thanks!

    You are a very detailed ! And here’s an interesting fact: blueberry bushes require a very acidic soil to thrive so pouring vinegar on the soil is useful; it takes apples to make blueberries grow, isn’t nature amazing…. ! ; )

    I have never tried with vinegar scoby, but when I have too many from kombucha, I make scoby jerky and it is delicious. Slice thin, pat dry, marinate overnight in equal parts soy sauce, honey and sriracha, then dehydrate. Reapply some of the marinade a few times during drying time to intensify the flavor.

    My mom used to make her old white vinegar and feed it with pine apple juice or coconut water from a coconut. It always tasted so much better and she has a huge mother in the bottom of the jar. She would give them away and Ppl Always say it taste so much better. Very straightforward vid. Much appreciated!

    Im so excited! Trying my first fermentations today with Fermented Hemp milk and this ACV. 11.11 -- thank you for making it so clear and so easy to understand, as this fermentation area is kinda scary but my gut NEEDS my attention and care. Thank you so much for helping me want to even Try it. Subbing and look forward to doing all the veggie fermentations like sauerkraut and pickles too! Can't wait til the morning to try out my Hemp Milk!!! :D

      so far my ACV is looking bubbly and smells more like vinegar each day! Stirring Daily and keeping It covered with a coffee filter too. Today is Day 11 and the apples are starting to fall and I see a thick layer of apple mother forming as of about 2 days ago. Can't wait till it's all done to teste it. I used apples from our trees at the end of the year harvest and brown sugar with filtered water that has a higher ph. Will let you know how it turns out! and Thank you again!!! Enjoying your video's so much and learning so much. You are a wonderful, just Wonderful Teacher. Gonna be making your bread for Thanksgiving as one of the recipes for the rolls.     i just started making wild fermented fruit vinegar this month and is really enjoing the process so much ive decided to make it into a business. found out that some fruit vinegars really fetch a high price as well specially if its wild fermented.

    It’s that time of year again, harvested my apples and since last year was the first time I ever made vinegar, I had to refresh my memory and watched it all over again. I still have many liters standing from last year, but just the other week something really nice happened! There was this lady who had suffered from obstipation for many years, despite all kinds of medication. I gave her some of my apple vinegar and just shortly after I got the announcement that she had been to the toilet twice in one day! 🥳🥳

    Did you comment about using honey or maple in place of sugar? I couldn't find it if you did. Either way I'm currently trying honey since I don't keep sugar in the house, had scraps from making apple crisps on the dehydrator and wanted to try making vinegar. :)

      God's Word says eat not only the fruits, but the seeds too. Cyanide attaches to random cancer cells in the body. Good stuff!

    Very well done. I'm a process step by step and detail explanation person. This is what I would do if I made the video. I watched other ones but kept on searching because, I learned from my job, if there's gaps and questions, that means you don't have enough information.
    I think I now have enough information not to mess it up too much. I tried before and as soon as I saw mold, I would just panic and toss it. Oh well. I'm much more comfortable now to try again.

    I must say this is a great video and I have made delicious vinegar because of it. The only thing I didn't follow was 'I don't recommend using coconut sugar', my vinegar was fed a coconut sugar brine and turned out great. I'm sure the quality of the sugar varies from brand to brand but just putting that out there. Thanks!

    Great video, easy to understand instructions - thank you for the printout too. I made 3 batches, a week apart, using cut up apples. Fermentation went great. Now, the vinegar has been sitting for a few weeks and is ready to cap. Ph seems good. My only comment is - the vinegar is tangy but smells a little like mold with a little white residue on the sides of the jar. No visible mold on top. Guess I'll set it in the cupboard and see if something develops. As it is, I can still add it to the chicken's water. 🙂

    Thank you for this amazing and very informative tutorial! At first I thought I would just scroll through but I ended up watching the whole thing! Then I went onto your written recipe too! This is my second time making ACV. My first one was Feb 15, 2019 and I only have a little left which I added a small amount to my new one. I also ended up sewing a cute little, breathable cover for it too. Its super cute!
    UPDATE: I started it on Aug 2, 2024 today is Aug 8, 2024. Its doing really good! and fast compared to the first time I did it in winter. The last three days I've been stirring it twice a day due to our high and humid temperatures. Thanks again for a great tutorial!

    I just started mine today with nothing but apple cores. They had all been stored in the refrigerator but come from an organic CSA we belong to. Fingers crossed. Thank you so much for such an excellent instructional video.

      I failed on my vinegar. Once it started to smell yeasty and fermented I strained it and am using it as a probiotic drink. Man o man is it delicious!

    Wow, this video is top quality!
    Since the ferment is a glucose process it might be interesting to use dextrose powder which is just glucose.
    I'll definitly try my homegrown apples with homemade maple syrup, of course.
