I too grew up in a large family on a hundred acre farm in Maine, potato country. We had an acre garden and we all worked very hard all year round, wood stove for heating and cooking, feeding animals working in the fields, dairy cattle, meat cattle, chickens, pigs. I couldn’t wait to grow up and leave the farm and now I wish I was back home again. The farm is still in the family as of now. I’m canning now and loving it. Father bless us all who love him! ❤️🕊❤️

I used the same tactics on my children, and now my grandchild, that my mother used on me...it still works, lol. The more my grandson says "I hate this" the more I smile...smiling in Ky.
I now make applesauce in my Instant pot. 20 apples, cored, peeled and quartered, 1/2 a lemon, 1/4 to 1/2 cup water or cider, cinnamon to taste, 2 tbsp of maple syrup. Cook 5 minutes with a 15 minute release, stick blend and that's it.. I don't strain any water off before stick blending because I prefer my applesauce on the smoother/thinner side but you can always strain before stick blending. I used to use the foley food mill and it was a pain. This way is more work in the beginning but once they're cooked other then stick blending you're done. I make a couple batches this way and then can all at one time. Just my 2 cents if anyone wants an easy way to make it. Love your channel!
Thank you for this video. My parents always cut the skin off and removed the seeds before cooking. I have osteoarthritis in both my thumbs, and I can't be cutting the skin off. I was going to buy an apple peeler, but seeing how you strain everything with the victorio strainer, I searched and found a new one on ebay, and purchased it. My dad planted apple trees when he was young, thinking in his older years he would make money selling apples, but later on we found out that spraying the apples causes cancer so he stopped spraying them. We cut around the worms as well to make applesauce, apple crisp, etc. Both my parents have passed away. Right now I have a whole bunch of York Imperial apples that I need to pick and can. I never canned before, and this is why I am watching your video on how to can applesauce. I love applesauce, especially when it is home made. All your videos are so informative, and I like that.
My dad rigged up a swamp cooler motor and a belt and wheel that can be hooked up to the Victorio strainer. You just flip a switch and it runs by itself nice and fast! He made one for my mom years ago and I asked for one for a Christmas one year. I’ve done from 100-200 quarts of applesauce at a time and this makes it a breeze!
I'm number 10 of 11 kids. Mom did down more than a hundred jars of foods (pickles, berries, chow, jams, etc). While we were poor, we were never hungry. To this day, wasting food makes me feel horrible. I have a few apple trees, and I eat them and make apples sauce even though the apples are far from perfect. Thank you for the wonderful video. I hope there is never a day when food is scarce but as you said, it may happen.
Wonderful video. I have the same juicer, probably 40 years old and still going strong. I don’t compost the waste, skins, core and seeds. I use it to make wonderful clear apple jelly. The trick to getting clear jelly is not to force or squeeze the juice from the skins through cheesecloth. Just let the juice drip naturally by gravity into a bowl. 👍👍
What a money saver after I watched this video! You mentioned the brand name of the Victorio and I was going to check on pricing, when I realized it looked familiar. In my throw out pile that I have been building for a month, I had tossed something I had no idea what to use for. I thought it was a simple meat grinder that I didn't need. Turns out it is a vintage Victorio unit! This one is metal and had everything with it except the top bowl. I can make one, or if I keep looking I may find the bowl here somewhere. Thank you so much. Making applesauce this weekend for sure.
First year for me to water bath can applesauce so appreciate the demo. Last year I put them in tiny jars and froze them and also freezer-bagged apple slices with brown sugar and cinnamon for pies. Think I will like the canning method best as it saves on freezer space. My apples are a little tart too since I can't wait to let them ripen until super red as the crows get at them. I appreciate the reminder that some years the yield will not be that great. I thought I was doing something wrong and even bought some fruit tree fertilizer spikes for next year's apples, cherries, and plums. One year I was overwhelmed since all the trees produced an excessive amount and lately not so great. This year the apples are bigger, so water bath canning as per your instructions. Thanks!
I cook mine in apple juice , a little sugar and mash, I quite like a few pieces of apple but you could stick blend it to make it smoother. It’s not as thick as yours but it’s not runny either . Love your videos x

I've peeled, cored and sliced about 50 of these little things to get one crockpot and one 7 tray dehydrator full today. They will be lots of work to process but so very thankful to have them. Hi Rose, I canned my 1st applesauce and made sure there were no air bubbles with 1 in head space and a water bath for 40 minutes. Afterwards, I have a small amount of air bubbles in the jars. Is this normal? Thanks for your help and Blessings 🙌 🙏

For me it is much easier to use my instant pot. I do not peel my apples, only core them and remove any bad parts. Cook in instant pot for 20 minutes with a bit of apple juice, then put in my vitamix and blend. Makes delicious applesauce with little effort.
I enjoyed your video. Clever way to get cinnamon in your recipe! I did some and the apples I used were Gala apples. They are delicious. I cooked mine in my instant pot with just 1 cup of water for 9 minutes. It cooked the apples really good and they were full of juice. My applesauce was a little runnier than yours and I thought once of boiling it down a little before I put it in the bottles but decided not to. It turned out delicious. Thank you for your encouragement. I love your philosophy about not wasting food and also teaching us it's ok to use products from the store if we can't raise them such as frozen foods to dry. I guess the important thing is to have on hand what your family will eat regardless of where your get it.

My kitchen never looks that tidy when I am making applesauce. Kudos for a great job! My mother was 87 when she was still making applesauce so she shamed me back into making it again. And my husband loves it. Since I have to buy apples, I only buy the sweet type so I don’t have to add sugar. But I only do it when they are on sale. This early batch is a wonderful blend of apples. Like you said, it’s always a surprise to find out what flavor you will have when you open the jar. I’ll do another batch when apples are on sale again. Thanks so much for the video. Loved it! ❤
We live on a small farm with a ancient gravenstein apple tree...apple season, my husband just picks apples off the ground and eats around damaged parts.😆
Another fantastic video. I love applesauce and I like to take 3 or 4 different kinds and do them together. Tomorrow I am going to be doing Apple butter and I've never done it before so this is gonna be interesting but my granddaughter ask for some and so she has a birthday on the 3rd so this will be her birthday present.
I love applesauce on my morning oatmeal. I usually do around 8-10 liters and that’ll last us the year. Here in Sweden a lot of people use their stand mixers (Ankarsrum, KitchenAid etc) with a strainer attachment that works the same as your Victorio. But I like to do it the very old fashion way, with a wooden cradle with a stainless steel strainer sheet nailed in the bottom. Then I use a wooden roller to push the pre cooked apple parts (I also use everything) through. So it’s very similar. We rarely have to use much sugar, quite sweet apples. Our applesauce always turns brownish but that’s ok, I don’t mind. It’s still delicious! ☺️ Try to add cinnamon and cardamom, very tasty combination. I’ll have to try to use nutmeg, not very common over here. Great video as always, thank you! 🍏

Hello RoseRed Homestead. I am just wondering if we need to use bottled lemon juice to can applesauce. I am confused cause some said we have to put bottled lemon juice to make it safe. But I read it also says that” the most recent edition (2015) of the USDA Complete Guide does not require lemon juice in applesauce United States Department of Agriculture (USDA).” I just want to make sure if is there is an updated USDA canning for applesauce that says we have to use bottled lemon juice. I am so sorry if I am just new to canning and I have to ask. I appreciate it. Many thanks also to all your videos.

Hi, I have a question about canning apple sauce. I did a small batch today. I made six jars but could fit five in the Nesco/Carey canner. The one that didn't fit looks like normal applesauce, and the five that I pressure canned according to the USDS canning guide are pink. Is that normal? 🤔

We use different types of apples mixed and don’t have to add much if any sugar. We buy utility apples from the farm stand. Kind of like scratch and dent.
Would it be ok to just can the applesauce and then season when you put in your bowl? Does the sugar preserve or just flavor? I was thinking if I just can then I could add honey to the bowls!
I Love your "bloopers" like when you almost put cumin instead of cinnamon. And each time you tasted the Granny Smith applesauce, except for the last time, your right eye closed I took it to mean the Granny Smith were too tart. The last time, your right eye did not close, and you said I can live with that!!!
We peel and core the apples and cook the peels and cores in water until they are very soft, strain it keeping the juice add sugar to make it into syrup cook it down until it's thicker, either for jelly or syrup, the apple skins have enough pectin to make it's own jelly.

Please talk about steamer canner vs waterbathing. I have a friend that has been steamer canning for years with no issues however. However I understand steamer canners are not approved. Please advise.
My neighbor has a yellow apple tree that wastes every yr and I asked if I could pick some. I had to cut out alot of worm holes and I just put the good flesh thru blend with peels and cooked them- apple pectin is in peels I hear- so I dont peel them. Hoping to can these....free fruit yay.
I love homemade applesauce. I usually make it in a couple of crock pots at one time. We like it a little chunky so when the apples are cooked, I just use a potato masher to sauce them, (ha ha)! Turns out slightly chunky...just how we like. I use a variety of apples and also add cinnamon and nutmeg. So yummy. I usually freeze it but since we don't have a stand alone freezer, our space is very limited. I think I will try canning it next time I make it.. Thank you so much for your videos. I found a good price for a bushel of mixed apples for $15 Can’t beat the price. We canned 16 pints of apple butter and 16 pints of applesauce. Turned out great. Have you ever made apple butter?

Question: I purchased new Ball jars w/lids and washed them in the dishwasher. I canned applesauce. The result was good-looking applesauce with a metallic taste and smell . Next batch I hand-washed using soap, water and bleach; but, there was no difference in taste and smell. They seal fine My question is this: Do you think these jars are safe to use? I am concerned about eating the applesauce.

My mom used to make apple sauce in the crock pot. I hope I have her recipe somewhere. 💕 I've just started growing things in the garden. It started as a lockdown project with the toddler and turned into 15 bell pepper plants and six very tall San Manzano tomato plants! I'm thinking about what foods we eat most and how to incorporate them into next year, particularly the foods we spend the most $ on. I greatly appreciate you sharing your knowledge. One of my regrets is never participating in one of my mom's canning sessions. She canned peaches (we had a prolific white Babcock in our yard), strawberry jam, and watermelon pickles. I miss her.
Congratulations on your success in turning the lockdown months into productive family triumphs! That is fabulous. Although you may have missed being tutored by you mother on canning, you can still learn all you wish to learn from other sources. Your mother sounds like she was a talented canner--I have never done anything like watermelon pickles!
Pam, I just ordered one of these from Amazon and it’s called a Johnny Applesauce maker I think and it’s under the Kitchen Core brand name yet it’s still called a Victorio strainer. I bought the 1 with an electric motor as I’m getting older and have health problems that makes my canning projects more challenging these days. They say I won’t get for 2 weeks which is a total bummer but I’m looking forward to cranking out more applesauce.
My apple sauce is pink because I leave the skin on when cooking (I use only apples from unsprayed trees) then I simply push them through a fine mesh strainer with the back of a large ladle - very special (Auntie Gabi's pink apple sauce lol).

I've bottled/canned successfully with the water bath method until this week when it siphoned and in the jar it has separated with liquid on the bottom and solids on the top. Do you have a video that explains why this happens? I'd love to know where I've gone wrong.

Great video. This is the same way I do applesauce but I was putting the applesauce on the stove to add the sugar and getting a lot of splatters so the way you are doing it with the sauce just warm in the jars is ok, right. That way no splatters.

I just made a batch of apple pie filling from another of your videos. I got 9 qts and it tastes amazing. I have some apples leftover so I'm going to can some applesauce. I boiled down the peels and cores from the apple pie filling and made juice to make some apple peeling jelly. I have 2 questions. 1. I'm wondering while making the applesauce if the water used to cook the apples can be added to this juice (maybe reduced for more flavor). 2. Can the waste from the food mill be boiled down to extract juice in a similar manner as I did for the apple pie filling peels and cores?
Nice to see you, Pam . I need to get us some apples, my apple are empty on the shelf. Except I have 2 apple pie filling left. I like to mix granny smith with a golden supreme apple. I love using nutmeg, also, and ginger with brown sugar. We are not to fond of cinnamon. Your looks delicious. One year I was cutting out more bad spots then good, it seemed. I really like Fuji as well. It depends on what I am using the apples for. I can use Granny Smith for applesauce and pies because I add extra sugar. But for dehydrating, I like a sweeter apple like Fuji. Thanks for watching.

I just checked USDA and they give no processing time for pressure canning applesauce. I don't think it would hurt to do it that way, but I am not sure how long you would process it.

I want you to know I started pressure canning directly as a result of your instruction and it has changed my life. I had my brand new Presto canner sitting in my closet for 10 years, too intimidated to try, until I carefully watched your excellent classes, and took notes. Thank you, from the bottom of my heart!!
Hi Pam, I have canned apple sauce a few times now. The other day as I placed the jars into the water bath I noticed a few air bubbles come out of a few of the jars. I didn't think anything of it, however, those jars have a thud sound when testing for sealing. I opened on and it seems fine should I store all of these in the fridg? Thanks for your reply.
Air bubbles coming out of jars is pretty normal. If they are sealed--and you could try picking them up by the lids to double check--they are ok and will not need to be stored in the fridge.
Hi, a question , and thank you for all of your research on preserving food. Would I be able to safely water bath can, apples, (not apple sauce, just sliced apples) using a sugar substitute? I cannot digest sugar, but I’m able to use a few different substitutes, though I prefer stevia. Could I leave the sweetener out completely? Thanks 😊
For water bath canning, it doesn't need to be sugary, it just needs to be acidic, which it already is naturally. Here's the USDA's site where you can see they allow for sweetened or unsweetened, water bath or pressure canned.
Dennis: USDA (nchfp.uga.edu), Complete Guide for Home Canning, Guide 2, page 7, stated "If desired, slice apples into ascorbic acid to prevent browning." You could also use vinegar, if you choose. Jim

Mom died young and grandma canned froze and did all she could. We did not like gardening canning but at 61 today I am so blessed she made us help😀

My mother was 87 when she was still making applesauce so she shamed me back into making it again. And my husband loves it. Since I have to buy apples, I only buy the sweet type so I don’t have to add sugar. But I only do it when they are on sale. This early batch is a wonderful blend of apples. Like you said, it’s always a surprise to find out what flavor you will have when you open the jar.
I’ll do another batch when apples are on sale again.

We live on a small farm with a ancient gravenstein apple tree...apple season, my husband just picks apples off the ground and eats around damaged parts.😆

Tomorrow I am going to be doing Apple butter and I've never done it before so this is gonna be interesting but my granddaughter ask for some and so she has a birthday on the 3rd so this will be her birthday present.

I love applesauce on my morning oatmeal. I usually do around 8-10 liters and that’ll last us the year. Here in Sweden a lot of people use their stand mixers (Ankarsrum, KitchenAid etc) with a strainer attachment that works the same as your Victorio. But I like to do it the very old fashion way, with a wooden cradle with a stainless steel strainer sheet nailed in the bottom. Then I use a wooden roller to push the pre cooked apple parts (I also use everything) through. So it’s very similar. We rarely have to use much sugar, quite sweet apples. Our applesauce always turns brownish but that’s ok, I don’t mind. It’s still delicious! ☺️
Try to add cinnamon and cardamom, very tasty combination. I’ll have to try to use nutmeg, not very common over here. Great video as always, thank you! 🍏

I am curious if you don't mind sharing, do you live in the city/town or country? I live in a small town, but wish I lived in the country for many reasons, one of which is that we could have more space for food bearing plants/tees.
We are blessed to live out a ways from town on a 3-acre plot accessible only by a dirt road, so I think that qualifies as "country"! LOL

Hello RoseRed Homestead. I am just wondering if we need to use bottled lemon juice to can applesauce. I am confused cause some said we have to put bottled lemon juice to make it safe. But I read it also says that” the most recent edition (2015) of the USDA Complete Guide does not require lemon juice in applesauce United States Department of Agriculture (USDA).” I just want to make sure if is there is an updated USDA canning for applesauce that says we have to use bottled lemon juice. I am so sorry if I am just new to canning and I have to ask. I appreciate it. Many thanks also to all your videos.

Hi, I have a question about canning apple sauce. I did a small batch today. I made six jars but could fit five in the Nesco/Carey canner. The one that didn't fit looks like normal applesauce, and the five that I pressure canned according to the USDS canning guide are pink. Is that normal? 🤔

Why is apple butter and apple sauce ok, but pumpkin butter is not ? I truly don't know!
We use different types of apples mixed and don’t have to add much if any sugar. We buy utility apples from the farm stand. Kind of like scratch and dent.
Would it be ok to just can the applesauce and then season when you put in your bowl? Does the sugar preserve or just flavor? I was thinking if I just can then I could add honey to the bowls!
I Love your "bloopers" like when you almost put cumin instead of cinnamon. And each time you tasted the Granny Smith applesauce, except for the last time, your right eye closed I took it to mean the Granny Smith were too tart. The last time, your right eye did not close, and you said I can live with that!!!

We peel and core the apples and cook the peels and cores in water until they are very soft, strain it keeping the juice add sugar to make it into syrup cook it down until it's thicker, either for jelly or syrup, the apple skins have enough pectin to make it's own jelly.

Please talk about steamer canner vs waterbathing. I have a friend that has been steamer canning for years with no issues however. However I understand steamer canners are not approved. Please advise.

My neighbor has a yellow apple tree that wastes every yr and I asked if I could pick some. I had to cut out alot of worm holes and I just put the good flesh thru blend with peels and cooked them- apple pectin is in peels I hear- so I dont peel them. Hoping to can these....free fruit yay.
I love homemade applesauce. I usually make it in a couple of crock pots at one time. We like it a little chunky so when the apples are cooked, I just use a potato masher to sauce them, (ha ha)! Turns out slightly chunky...just how we like. I use a variety of apples and also add cinnamon and nutmeg. So yummy. I usually freeze it but since we don't have a stand alone freezer, our space is very limited. I think I will try canning it next time I make it.. Thank you so much for your videos. I used a Foley stainless steel Food mill to remove skin & cores for Apple sauce, similar to what you did. Works great & big time saver

I think most people in our age group grew up like this. Don't waste. Its so sad to see the world being so wasteful now. I think people think i am cheap for doing the things i do. Great video Pam. PS i beieve Victorio still makes that machine. I was looking at one on a canadian website early summer but now since the canning fad hit...you can't get it. But i am sure it will be back

Question: I purchased new Ball jars w/lids and washed them in the dishwasher. I canned applesauce. The result was good-looking applesauce with a metallic taste and smell . Next batch I hand-washed using soap, water and bleach; but, there was no difference in taste and smell. They seal fine My question is this: Do you think these jars are safe to use? I am concerned about eating the applesauce.

I've just started growing things in the garden. It started as a lockdown project with the toddler and turned into 15 bell pepper plants and six very tall San Manzano tomato plants! I'm thinking about what foods we eat most and how to incorporate them into next year, particularly the foods we spend the most $ on. I greatly appreciate you sharing your knowledge. One of my regrets is never participating in one of my mom's canning sessions. She canned peaches (we had a prolific white Babcock in our yard), strawberry jam, and watermelon pickles. I miss her.
Congratulations on your success in turning the lockdown months into productive family triumphs! That is fabulous. Although you may have missed being tutored by you mother on canning, you can still learn all you wish to learn from other sources. Your mother sounds like she was a talented canner--I have never done anything like watermelon pickles!

Yes--you can use it for any soft food--cooke potatoes, tomatoes, and probably a lot more that I can't think of at the moment!

Pam, I just ordered one of these from Amazon and it’s called a Johnny Applesauce maker I think and it’s under the Kitchen Core brand name yet it’s still called a Victorio strainer. I bought the 1 with an electric motor as I’m getting older and have health problems that makes my canning projects more challenging these days. They say I won’t get for 2 weeks which is a total bummer but I’m looking forward to cranking out more applesauce.

My apple sauce is pink because I leave the skin on when cooking (I use only apples from unsprayed trees) then I simply push them through a fine mesh strainer with the back of a large ladle - very special (Auntie Gabi's pink apple sauce lol).
So do you steam your apples ?
We never tossed out a damaged vegetables or fruit. We cleaned them up also.
New subscriber from the UK. I'm allergic to raw fruit but not cooked fruit so I love to make apple sauce. I've bottled/canned successfully with the water bath method until this week when it siphoned and in the jar it has separated with liquid on the bottom and solids on the top. Do you have a video that explains why this happens? I'd love to know where I've gone wrong.

Great video. This is the same way I do applesauce but I was putting the applesauce on the stove to add the sugar and getting a lot of splatters so the way you are doing it with the sauce just warm in the jars is ok, right. That way no splatters.

I just made a batch of apple pie filling from another of your videos. I got 9 qts and it tastes amazing. I have some apples leftover so I'm going to can some applesauce. I boiled down the peels and cores from the apple pie filling and made juice to make some apple peeling jelly. I have 2 questions. 1. I'm wondering while making the applesauce if the water used to cook the apples can be added to this juice (maybe reduced for more flavor). 2. Can the waste from the food mill be boiled down to extract juice in a similar manner as I did for the apple pie filling peels and cores?
Nice to see you, Pam . I need to get us some apples, my apple are empty on the shelf. Except I have 2 apple pie filling left. I like to mix granny smith with a golden supreme apple. I love using nutmeg, also, and ginger with brown sugar. We are not to fond of cinnamon. Your looks delicious. One year I was cutting out more bad spots then good, it seemed. But I had enough after much work to can 18 pints applesauce and make up 14 pie fillings. Love this stuff. Thank for sharing. Have a wonderful day. Both of you!!

Just learning how to can with a presto canner , I was also given a water bath canner and not sure what all I can do with that
Water bath canning is for high acid foods like applesauce and other fruits. Pressure canning is for low acid foods like veggies and meats.
Fugi, Braeburn, and Gala are my favorite varieties.
I really like Fuji as well. It depends on what I am using the apples for. I can use Granny Smith for applesauce and pies because I add extra sugar. But for dehydrating, I like a sweeter apple like Fuji. Thanks for watching.

I just checked USDA and they give no processing time for pressure canning applesauce. I don't think it would hurt to do it that way, but I am not sure how long you would process it.

I want you to know I started pressure canning directly as a result of your instruction and it has changed my life. I had my brand new Presto canner sitting in my closet for 10 years, too intimidated to try, until I carefully watched your excellent classes, and took notes. Thank you, from the bottom of my heart!!

Hi Pam, I have canned apple sauce a few times now. The other day as I placed the jars into the water bath I noticed a few air bubbles come out of a few of the jars. I didn't think anything of it, however, those jars have a thud sound when testing for sealing. I opened on and it seems fine should I store all of these in the fridg? Thanks for your reply.
Air bubbles coming out of jars is pretty normal. If they are sealed--and you could try picking them up by the lids to double check--they are ok and will not need to be stored in the fridge.

Hi, a question , and thank you for all of your research on preserving food. Would I be able to safely water bath can, apples, (not apple sauce, just sliced apples) using a sugar substitute? I cannot digest sugar, but I’m able to use a few different substitutes, though I prefer stevia. Could I leave the sweetener out completely? Thanks 😊
For water bath canning, it doesn't need to be sugary, it just needs to be acidic, which it already is naturally. Here's the USDA's site where you can see they allow for sweetened or unsweetened, water bath or pressure canned.

You didn’t add any Lemon juice. I’ve read a few articles and some say add some and some say optional. So, I’m confused.
Dennis: USDA (nchfp.uga.edu), Complete Guide for Home Canning, Guide 2, page 7, stated "If desired, slice apples into ascorbic acid to prevent browning." You could also use vinegar, if you choose. Jim
