Suspect the weather didn't help but normally the busker is kicking everyone's arse and raising the mood from start to finish. The ending was typical busker hilarity but it felt like you wasn't feeling this one from the start. That's not a criticism btw as I'm sure it's tough out there, I work outdoors and know how minging it's been the past few months, gets you down. Spring is coming and I'm sure with improved weather, meaning happier punters and your continued quality food output, the Busker will be smashing it again.

A nice trick my grandmother showed me for the eggwash: Just put a bit of milk or cream in, it helps combine everything and makes it easier for the egg to stick to the flour.
Food Busker, I really like your work. Thank you for what you do. Having said that, a burger is made with ground beef. This is a Chicken Schnitzel sandwich not a burger. It looks friggin awesome though. Sign me up for one.
10 quid for these! Streetfood or not these got so much attention to detail, texture and overall great flavours, definitely wouldn't mind paying a bit more for these Schnitzel burgers :D
Nice! If you trim the chicken first, cut off the tail then split the remaining part of the breast horizontally, you get three pieces that will fit the buns with no waste. (You will still need to pound each piece to the same thickness.

I had a bacon double cheeseburger with candied bacon (double dry-aged beef patties) at the Kerb street food market once, and I paid 10£ (just the burger). I would have melted the cheese slices a bit, looks amazing though. However, £8.95 is quite expensive considering it's street food and doesn't come with fries or anything, imo.

Nice recipe! Quick tip: you can make a baconnaise emulsifying the bacon fat directly with the eggyolks in order to have an extra bacon-flavoured kick!
