I mean, their bodies are 95% cartilage. The only bones they have are their teeth and maybe jaw. Their fins need to be flexible, so I imagine it's made of mostly fatty tissue.
You'd need to raise sharks *and* their prey in an ocean the size of Europa or Enceladus to maintain a shark meat supply capable of feeding just North America. Not that the situation with cattle is much better from an economic standpoint, but at least cattle *can* be raised on ranches.

Shark is an extremely good choice of tasty fish its much more solid and meaty than most fish with a mild sweet taste. Very healthy meal with some good mash potatoes or crusty bread. Fat is not bad for you at all, its required by your body to speed up recovery, animal fats especially.

Drag fishing and some tuna catchers tend to unintentionally fish them, and instead of returning them wounded, the fishers just sell them on retail, and given our fishing laws are quite lax compared to other countries, a fisherman with a regular fishing licence can sell it without fuss. Compared to the more expensive fish it's quite dry, and I guess it's mostly due the low fat the thing has, given it needs to constantly move in order to breathe.
Also lots of urea (aka _urine)._ Sharks literally store urea in their muscles. Its one of the reasons most cultures consider shark meat unpalatable. The only exceptions to this are things like the fins (which are mostly cartilage) in soups (which have had devastating impacts on global shark populations, as sharks are slow breeders) and a certain smoking technique from Iceland for sleeper sharks (whose flesh is otherwise extremely toxic to humans) that gives the meat a cheesy texture. Inuits also have techniques for hunting sleeper sharks in the Arctic, but without the aforementioned preparation techniques, they reserve said shark meat for feeding their sled dogs in times of famine.
