Can we use instant yeast?
Yes but due to most of the backery yeast wine smell is not good.
You can try this yeast in the link. One of my subscriber is using this yeast. I haven't try this yeast but will try soon and give my opinion about it.

I have a question sir. It is very hot where I live. Temperature goes up to 44 degrees. Is it possible to make wine in this temperature?
I tried to make 5 gallons of water melon wine with 2 big water melons and 3 kgs of shakar. It fermented very well for 2 days and now it is not fermenting.
Is the fermentation complete? I don't have a hydrometer.
Is it be because of the heat?
You've put in a little extra sugar. If there is some space, then mix melon juice and water in it.
Yes it is possible to make wine in hot temperature, as you mentioned the temperature is very hot, fermentation also starts faster and stops quickly.
You wait for the wine to be clean, only after that the wine will be drinkable.

There must be slow fermentation still going on.

If ur using homemade airlock on it then there is a chance of leakage.

ओर
दूसरी एप्पल ओर अर्जुन छाल मिक्स करके बनाई थी
आज लगभग 15 दिन ही गए है
वाइन के ऊपर हल्का सा दाने जैसा कुछ आ गया है
ओर में इसमे पपीता का छिलका भी डालना भूल गया
क्या अब डाल सकता हु पपीते का छिलका
बॉटलिंग कर लिजेए और फ्रिज में रखे हफ्ते भर के लिए। फिर से फिल्टर कर लेना अप्पर अप्पर से दूसरी बोतल में उस के बाद ही पिजेएगा।
