The trick to eggplant is to soak the slices in milk or water first then remove and brush on oil and grill or sauté. If Thomas gets any taller, you will need a convertible! 👍🏼🇨🇦♥️

The new Netflix show called “ nobody wants this “ is amazing . It’s 10 episodes ( 25 min) it’s a feel good show .
Also eggplant Parmesan would be great and you can use a cheese substitute .

I am watching Schitts Creek, again 😂 FYI- still recommend 👍 I love podcasts so much but I really struggle with audiobooks. My mind just tunes out and wanders. I think I need the back and forth of conversation of a podcast to keep me engaged.

I think your rice wraps needed to soak a little longer to make them softer for you.
I can't help you with the eggplant it's one of the few things that I've tried multiple ways and it's just not my thing 😟
