- Pan Seared Salmon
Spray non stick pan with cooking spray, place Salmon Fillet skin side down and cook over medium heat for 4-5 minutes. Turn and cook 2 minutes more or until cooked through.
Couscous
Bring 3 cups of chicken broth to a boil in a sauce pan, add 1 1/2 cups of couscous. Put lids on pan, turn off heat and let sit for 5 minutes. Fluff with a fork. Yields 6 servings.
Blood Orange Spinach Salad
-11 ounce baby spinach
-3 blood oranges, peeled and sliced into ten slices each
-2 cucumbers, peeled, seeded and sliced
-6 ounce blueberries and blackberries
Evenly distribute above items over 6 plates.
Lemon Shallot Vinaigrette
-zest of above blood oranges
-zest and juice of 3 lemons
-2 tablespoons of Olive Oil
-2 tablespoon honey
-1 shallot, finely minced
Oriental Chicken Salad Dressing
-3 tablespoons honey
-1 1/2 tablespoons rice wine vinegar
-1/4 cup mayonnaise
-1 teaspoon Dijon Mustard
-1/2 teaspoon sesame oil

Strawberry Spinach Salad with Poppyseed Dreessing

Coconut Chicken
-flour for dredging chicken cutlets
-can Trader Joe's coconut cream or Milk
-2 cups panko bread crumbs and 1 cup shredded coconut
Dredge chicken cutlet if flour, dip in coconut cream and coat with panko & coconut. Fry in an iron skillet with a small amount of canola oil until browned on both sides. Place on a cookie rack and place in 350 degree oven for about 20 minutes to finish cooking.
Apricot Dipping Sauce
-1/2 cup apricot preserves
-1 teaspoon grated ginger
-1/2 teaspoon grated garlic
-2 teaspoons Dijon Mustard
-1 jalapeno finely minced
-2 tablespoons lime juice
Brandied Mushrooms

Strawberry Spinach Salad with Poppyseed Dressing
Serves: 4
Salad: 8 oz baby spinach leaves 16 strawberries sliced thinly ⅛th red onion cut in very thin shaved slices 4 oz crumbled blue cheese 28 candied pecan halves Poppyseed Dressing: 1 clove garlic finely minced 1 Tablespoon Gulden's mustard 2 Tablespoons honey 3 Tablespoons red wine vinegar ½ cup light olive oil (or vegetable oil) ½ tsp salt ½ tsp pepper 1 Tablespoon poppyseeds

InstructionsPlace ¼th of spinach, strawberries, onions, and blue cheese onto four large salad plates.Place all dressing ingredients in pint canning jar, and shake vigorously for one minute. Spoon dressing over salad.Sprinkle 7 sugar pecans onto each salad.

I love these videos! It is so soothing watching you prepare these beautiful meals! I think I'm a pretty good cook but, your family must really love coming home for dinner every night! Most of the time it is just my husband and I for dinner every night and I always make a nice meal but, I love it when the kids come around and I can cook for them too!! Your salads are masterpieces!

What a beautiful salad. You always take the time to make things so beautiful. Hey, could you do a video in about how your meal planning differed before you retired? Did you pack lunches for yourself and Ken? What did those look like. So inspiring you planned and achieved your goals.
Marisa Ken and I took leftovers for lunches for years. The last few years Ken would come home for lunch and I would prepare it for him, things like tacos, soup, salads etc Shelby

Ok question.....and you might have already answered it if so I apoligize but before you make your weekly menu do you look through ads to see what is on sale and then try to fit your menu to that? Or how do you come up with these ideas of what you want to make for the week?
I do that for sure, and we also take advantage of meat sales. I try and keep the basics in the freezer like ground beef, boneless chicken breasts, pork loin etc So if the grocery stores don't have good prices one week, I can just pull from the freezer. I have been trying to use more seasonal produce too, it is usually cheaper and higher quality. So in the summer we eat a lot of corn, watermelon, tomatoes etc and I try and use those items when meal planning. Shelby
Thank you so much for your reply and that's very smart. It seems as if my family grew from 3 to 6 overnight so I am trying to be more organized and meal planning sure helps with that. I find it overwhelming but watching your videos gives me hope that I can do it, so thank you a million times over. :)

when my mom died I was no good to anyone for a few months, then I cried every day for a year when I drove home from work.
Robin I have been trying to get back into some sort of routine. I have moments in my day when I think of her and tear up, but I am starting to have more moments when I think of her and smile. Recipes BUT!! You do like what I used to do…. Tsp the utensils on the edges of glass jars snd ceramic bowls! My Home Ec Prof cured me of it! She told me I go from #1 in the class to last if I did it again! I was sure motivated!! & cured! She explained you epild/ could break little glas/ceramic shards in my food and it would have to be thrown out!! She also got me to break raw eggs into a bowl Girl’s, then add it to my recipe. Some eggs are spoiled or bloody! You can’t add it to the recipe. Using the small bowl first. You save all the heartache of messing up the recipe from tainted eggs!! There is a reason for everything. Trying to reach my 2nieces!! They get tapped up snd want to speed things up and forget.. could ruin the recipe!!
Otherwise… 💜 your recipes. Soo respect you for cooking at home soo often. At least you can say you know what’s in your food!!
