The Rwandese version of banana wine should include sugar to speed up fermentation and increase alcohol content in percentage form, and the process should last a week, and then after filtering the banana from the wine, the second stage is usually the aging process which should last another week, the final product should appear yellowish in color. Alternatively you can include yeast for fermentation, and the preferred yeast type is the top fermentation yeast called ( Saccharomyces cerevisiae.) and my prefered percentage is 5% of the liquid volume, and the banana ratio is 20% to 80% water.
