How to make Durian Puff 榴莲泡芙 (perfect recipe | without fail)

    In this video we will be showing you how to make cream puffs a.k.a choux pastry. The light, airy, fluffy puffs that go perfectly with any kinds of filling you may like. And today, we will be using the fruit many has a love-hat relationship with, the asian king of fruit: DURIAN!
    [Recipe]
    *20-24 two-inch puffs
    🌿INGREDIENTS🌿
    Dough 面团
    1. 50g unsalted butter
    50克 无盐牛油
    2. 60ml milk
    60毫升 鲜奶
    3. 60ml water
    60毫升 水
    4. 1/4tsp salt
    1/4茶匙 盐
    5. 1 tbsp white sugar
    1汤匙 白糖
    6. 75g cake flour
    75克 低筋面粉
    7. 2 eggs
    2颗 鸡蛋
    Filling 馅料
    1. 250g durian puree/durian flesh (blended)
    250克 榴莲湖
    2. 50ml whipped cream
    50毫升 鲜奶油
    🌿STEPS🌿
    1. Cook unsalted butter, milk, water, white sugar, and salt to simmer.
    小火热锅 加入黄油,鲜奶, 水,白糖和盐 煮至煨热。
    2. Turn off the heat, immediately add in cake flour and mix well until dough is formed
    煨热后把火关掉,即刻加入低筋面粉,搅拌成面团。
    3. Beat the dough for 1 minute to release heat, add in 2 eggs in two times and beat until fully combined.
    低速搅拌面团 1 分钟 散热,之后分两次加入 2颗 全蛋 搅拌均匀。
    4. Transfer the batter into a piping bag, pipe 2-inch mounds on a tray lined with baking paper, leave at least 1-inch in between.
    把面糊装入挤花袋,在烘培纸上挤出 约2寸大小 ,保持 1寸距离。
    5. Bake in 180°C for 25 minutes. When it is done, remove and let it chill to room temperature. Poke a hole at the bottom of each puff using a chopstick.
    180°C 烤 25分钟。取出后放凉。用筷子在泡芙底部钻个小洞。
    6. To prepare the filling, beat whipped cream to stiff peaks, add in durian puree and mix well using a spatula.
    把鲜奶油打发至硬性发泡,加入榴莲湖,搅拌均匀。
    7. Transfer the filling to a piping bag with a round tip, pipe the filling inside the puffs.
    把馅料装进挤花袋 (使用圆形裱花嘴),满满的挤入泡芙。
    8. Chill the puffs in the fridge for at least 1 hour before serving. Sprinkle with some powdered sugar and enjoy!
    放入冰箱冷藏至少 1 小时 , 食用前撒上少许糖粉。

    hello, does the durian filling can stay up long in room temperature ? if ca, for how long ? because its a whipcream i afraid it will change the taste if its not keep refrigerated :)

    請問為什麼麵糊的溫度是關鍵??
    是因為麵糊放冷了不能吸收太多蛋液 ??
    還是加入蛋液後麵糊的溫度會影響膨脹??

      Hello Janice 👋 面糊再加入蛋液之前先稍微散热以免鸡蛋被烫熟 影响面糊浓度 🙂

    請問做好的榴蓮泡芙可以冰冷藏多久?那也可以冰冷凍嗎?还有請問榴槤糊加入鮮奶油前需要先攪拌器打勻嗎?謝謝

      Hello Yile👋 榴莲泡芙建议一到两天内食用哦 不建议冰冷冻哦 泡芙皮会变干和硬 榴莲果肉可以稍微打匀 我个人喜欢不太匀 还可以吃到榴莲丝 😍
