    Vegan Malaysian Omelette (Telur Dadar)

    Slice:
    1 red onion
    1 red chili
    2 spring onions
    Dry Ingredients:
    1/4 cup or 30g chickpea flour
    1/4 cup or 30g rice flour
    1 tsp corn starch
    2 tsp nutritional yeast - bit.ly/3qUQz7A
    1 tsp mushroom seasoning - bit.ly/3qYJ67o
    1 tsp white pepper
    Kala namak (Himalayan black salt) to taste - bit.ly/3HLGEIq
    MSG (optional)
    Wet Ingredients:
    1/2 cup or 125ml of water
    1/4 cup or 50g silken tofu
    1/4 cup or 60ml aquafaba & pinch of cream of tartar

    Roti John
    Serves 2
    160g soft or firm tofu
    Salt to taste
    1 tsp black pepper
    1/2 tsp mushroom seasoning - bit.ly/3qYJ67o
    2 tsp cooking oil
    2 hot dog buns
    1/2 a serve of Vegan Malaysian Omelette Mix
    Bake tofu at 200°c for 15 minutes until golden and crunchy. Crumble into small pieces and stir into the omelette mixture.

    Murtabak Maggi (Instant Noodle Omelette)
    Serves 2
    1 packet of instant noodle seasoning of your choice
    1 block of instant noodles
    1 serve of Vegan Malaysian Omelette mix
    ----
    Grilled Eggplant Omelette (Telur Dadar Terung Bakar)
    2 large eggplants
    1 serve of Vegan Malaysian Omelette Mix

    Looks yummy... Can't wait to try! Most recipes only call for chickpea flour - I'm wondering what is the purpose of rice flour n corn starch in this recipe?

      Thank you! That's a good question, rice flour is to lighten the batter and give it crispy edges. The corn starch is to bind everything together. Hope this helps!

    Is nutritional yeast available in stores in Malaysia? I'm not vegan but I'm curious about what nutritional yeast tastes like (plus my mom is lactose intolerant so I want to try making vegan cheeses) but I couldn't find any in stores

      Yes! You can buy them in supermarkets like Jaya Grocer, Village Grocer, Qra Foods, etc. You can also get them online at Lazada and Shopee easily or at health food/organic/vegetarian speciality stores

      Hello, you can omit it but the texture will be a bit dense and more pancake like 😊 Hope this helps

      Hi! I heard that aquafaba just translates literally to mean "bean water", and that ANY bean cooking water can be used. I have seen videos with people using the cooking and canned water from beans other than chickpeas. I think color is lighter with white beans over dark/red beans, so navy, cannellini, ... They all have bean water! Yay! 🙂

    Chickpea flour and rice flour will never make an omelette. There's nothing about that starchy texture that is even remotely reminiscent of an omelette, it's more like a pancake if anything. Omelettes are originally made using eggs, which only consist of protein and fat; so it stands to reason that if you want to make a vegan version, you'll have to at least find a way to make it consist of only fat and protein. The best way would probably be to use isolated protein from soy or peas, mixed with something like coconut oil and probably an emulsifier like soy lecithin, and with certain flavoring ingredients and aromatics. Maybe then you'd start getting an omelette that actually has the texture of an omelette.
