Why set a stop/Loss when you can just set a trailing stop? Why one verses another?

Since trailing stop moves with the price as he explained. While if you have a stop loss which doesn't change, when it does somehow go a bit down and then up again, it wouldn't trigger the trailing stop because your SL isn't hit.
