To sterilise your jars:
Wash the jars and the lids in hot soapy water and leave them to dry upside down on a baking/roasting tray. Place in the oven at 160-180ºC for about 15 mins.

Recycled Cutie I’m a fiend for plums too😍 but same as blackberry is my faaaaaave🤤
My mum loved apple and blackberry jelly best of all however Apple and Clove Jelly on toast is addictive. Find Crab apples or wild apple trees on the side of the road for free fruit or, ask your neighbours with cooking apples for a bag or two and promise them some jam in return!! We use an old cloth flour bag or an old pillowslip to strain the apple pulp in to a big saucepan over night.
If you get the jam making bug, do buy a metal jug and a funnel for pouring the jam into the pots to avoid the splashes and sugar burns. These are available in good cook stores or online with Lakelands who also sell the elusive jam pot disc and covers by the 100 pack and these are always in stock in the Lakeland shop in Enniskillen.
I'm absolutely in awe of your wealth of knowledge and grateful for the tips! We actually have a little crap apple tree out the back with some fruit on there currently so this is now on my to do list! A little trip to Enniskillen could be in order very soon😍

We picked some this week near the coast and some sea thornberries (I call them prickleberries) made a jam with these and wow it was delicious

Thank you for this video. Blackberries are not currently in season here in the southern US. However, my family just returned from our first trip to Ireland (with a church group). We made so many beautiful memories walking along paths (at Glenarrif) and along the lane our Air Bnb was on, picking and eating the amazing wild blackberries!! Currently making your brown bread, wishing I had some Irish blackberries. Also wishing I had the recipe for the barley and leek soup we had while there.😍
Harvest moon is the best time to pick blackberries. They are ripe.

RISA WOLFSON thank you Risa 😍YES it just has added pectin so that there is a better gelling! You could get the same result with lemon juice. I just find it less wasteful since I’m buying a bag of sugar anyhow and then paper packaging is then recyclable 😍 Thank you so much for watching ❤️

You will find it online, this book has an amazing Autumn Fruit Chutney, (easier than jam) that is an anticipated classic Christmas present in our house. Please try it, imagine toast, chutney, ham and cheese under the grill on a cold evening...

Hi Sinead can I also add ,your wholemeal brown bread is the best ever, it takes me 10 mins to put together and into the oven. it is beautifully moist and stays fresh for a few days. My daughters make it and anyone who eats some of it wants the recipe .

@@SineadDavies just giving credit where it’s due , I had been looking out for a moist brown bread recipe that I could put together and pop into the oven in minutes to substitute the recipe I’d been using for years which was equally quick to put together and why I stuck to it but always turned out dry and only fit for toasting the following day. Thank you Claudia! If you use jam sugar you shouldn’t need to add pectin but if you use plain sugar yes you could definitely add pectin 😊
I use 8oz Blackberries, 8oz sugar and juice of half a lemon, microwave for ten minutes and hey presto.... same results, give it a try!

Yeayyyy that's great Steph hehe, I am too addicted to it. Of course the sugar haha! YES, apple is just the same process except instead of your kilo of blackberries you add 2 kilos of apple to 1kg of sugar and 2 tbsps of lemon juice to activate the pectin! It's genuinely that straight forward:D I LOVE apple butter too! I think the choice of apple will give you different results - bramley, Fuji but play around with it and find what works😍

Yes the jam sugar has added pectin :) Absolutely! This can work perfectly as well :)
@@SineadDavies Ahhhh I see, I've seen that stuff, never had to use extra pectin except for fruits that are very low in it; generally I find a bit of extra sugar and heat means most things set.
I've always added lemon juice, and a knob if butter for scum which clarifies it beautifully and imo adds some richness. I was taught by oldies though so maybe I'm behind the times!

I love making jam! I grow blackberries, gooseberries and rhubarb. All make lovely jams. Check out Miss Lori at Whipporwill Holler. She has a traditional recipe for blackberry jam cake. The color of the cake is beautiful!
