Today I want to share with you how to make the best Mexican chicken tortilla soup or also known as sopa azteca , The flavors on this soup is like no other, it’s soooo delicious and it’s perfect to enjoy on any day, any occasion, specially now that its cold!!!! This soup is not spicy at all the chiles just add a good amount of flavor, if you want it to be spicy, add Chile chipotle or arbol! So I hope you all enjoy it! Ingredients:
4 pieces of chicken breast with rib
20 corn tortillas
Black or pinto beans
Sweet corn
5 roma tomatoes
5 New Mexico or guajillo Chile pods
1 chile ancho
Handful of cilantro
1 onion
Garlic cloves
2 bay leaves
Chicken bouillon
1 tbsp whole black pepper
1 tsp cumin
Salt
1 serving of love 💕

I watched about a 1/2 dozen Chicken Tortilla Soup recipe videos before settling on this one because it didn't cut corners, and Claudia's presentation was so authentic and comforting. If I can make a 5-star soup from this recipe, ANYONE can! Delicioso!!
I especially dislike RUclips cooks who cut corners, simplifying recipes to get as many likes as possible. Many will say "If you don't have any (a main ingredient) just leave it out, it'll be fine. Makes me crazy !!!

You are so right. Some RUclips cooks just make me crazy. The say that they don't have a particular ingredient. They haven't planned the video at all, just looked around the kitchen and tried to make something with what they have and it they are missing something they need, they continue. Or maybe they've obviously never made the recipe before and just stumble around. Claudia obviously thinks of a recipe, notes all of the ingredients, goes shopping and then, in the kitchen prepares everything to be ready for us. And it is also obvious that she has made the recipe many times ... or at least until she knows it works. She is successful not only because she is a good cook (dare I say chef?) but she works very hard. And stays very beautiful doing it. June Cleaver and her high-heels and pearls have nothing on Claudia LOL...
As a Southern gentleman I lived in Arizona, California, Utah and New York. I really loved the Mexican cuisine especially in the West and Southwest and Northwest. After returning to the South I have been able to create some of my favorite dishes because of your channel. Thanks. You should have a TV show. Happy holidays.

I love how everyone makes tortilla soup different depending on where they’re from. I always like to try different variations of tortilla soup bcz this is one of my fave soups. But the one thing I stick to is the using Monterrey jack cheese. I feel it gives the soup a nicer creamier broth

This soup was so good! My whole family loved it, even my 18 month old girl. I just used tostadas bc we had some that I needed to use and it was delicious with those and saved me a little time.

You are one of my favorite cooking shows. Thank you 🙏🏻 I have used a lot of your recipes and they are all good. You have helped me learn how to cook some of my favorite Mexican dishes and learn about authentic Mexican ingredients.
This turned out amazing. I put a couple extra chipotle and chile arbol for spice (and a small extra roma to balance it out). I also threw the tomatos and chiles in a frying pan for a couple minutes before putting them into the blender, which added some smokiness. FYI make sure you're using a large pot, I used my dutch oven and it was almost overflowing.
