I made these last night. I had some lupin crumb so I used 1/4 cup lupin flour and 1/4 cup lupin crumb. The batter was very nice. As my timer went off I noticed my microwave door open with the stick of melted butter inside. OH NOOOOO .... I opened the oven and the muffins looked perfect. I tasted one right away and the texture was more like non keto baked goods. I was amazed. It even tastes good. I will definitely make these again but I think I will try them with 1/4 cup butter and see what happens. I also used the sweet corn extract and the flavor seems stronger today.
I made these for a work potluck to go with a Chili and oh my, they were delicious. I’ve made a couple keto versions of cornbread before and they were ok, but not spectacular. I also agree that the texture of Almond Flour is perfect for corn bread. I used sour cream instead of whipping cream. Next time I will use the whipping cream The muffin's were light and extremely moist. A great crumb and flavor. I already had a knock off corn extract but they were still great! Based on your recommendation I will purchase the expensive corn extract brand. The cornbread muffins are scrumptious and far surpass other keto cornbread recipes. Simply delicious! I tried these corn muffins again. They were delicious. I added cheese and chopped red/green peppers. I made sure I added more corn bread flavoring. This was very good. Very moist. The texture was good. This is a keeper. With the bread and now the corn muffins. I just need to perfect the biscuits. Love it all.

You need AMONIA to get that pan clean... pour some AMONIA in a glass bowl... heat ur oven up on the lowest temp, then turn it off to kool a little you want it to be warm. Put ur pan on the bottom rack and the bowl or AMONIA on the top rack close warm oven and let sit for about 6hours or leave it overnight (I leave mine overnight) but the next day the fumes will have released the stuck on grease and you should be able to wipe it away and wash as usual...works great on all pans, and even the stove top burner grill plates ( you would remove each into its own gallon Ziploc bag and pour AMONIA in each bag and let sit overnight also... May take a little elbow grease or may not... you can repeat again it u need too so u don't use a scrubbing pad but for ur pan use a light weight scrubber...
The best (and safest) cleaner in the world: sprinkle baking soda on it, then add some vinegar until it fizzes. You can either heat it up on the stove and then gently scrape with a wooden spatula or just allow it to soak for an hour or more depending on how badly the sediment is cooked to the pan. My pans are all super, clean and shiny....despite the huge mess I sometimes make! ;-)
I burnEDEDEDE my old FAVORITE SaladMaster Dutch oven. Scrubbed myself crazy to little success. Yes, Bar Keepers Friend and all!!!! All to almost no avail. 😢 Was advised by SM "they'd heard" to place in a garbage bag, ammonia in bottom of pan, lid on, seal bag. Let it sit ... OUTSIDE. Was in no rush ... but when got back to it, HALLELUJAH, it worked like a charm!! Most wiped out easily! Last little bit as gone with only a little scrubbing with trusty ol' BKF!!! Called SM back to say IT DOES CLEAN "ruined pans"!!!! TY TY
I purchased that extract and attempted to make cornbread for thanksgiving last year. I didn't taste anything and I used a tablespoon in my recipe. I'm going to try it again using your recipe. Hopefully it will taste like something.
The muffin texture was great but the corn flavor left something to be desired, I used double what the recipe called for and I think I'll use even more next time. I've heard more than one person say that corn extract is strong, I'm wondering if I got a bad batch. What's going on Amoretti???
There's a low carb tamale dough recipe online. I forget the name of the site. If you search for baby corn tamales you can probably find it. Baby corn doesn't have the carbs that mature corn does. But read the labels because some are low carb while one brand I've seen isn't! You can find it in the Asian section of the grocery store.
I have lupin crumb. I used 1/4 cup lupin flour and 1/4 cup lupin crumb. I also forgot to add the melted butter and it is amazing how great they turned out. I think the semolina is smaller than the crumb. I think that would work great too

i made this last night , it was quick to do, however it did have a bitter taste ..had to top with a lot of butter. was this the lupin flower? I did not use the miracle brand.
Scone pans is what I use. They look like pie sections. I use them for individual cake slices. Just throw in a container in the freezer and when I want a sweet, I thaw, split, and frost.
Hello from Belgium Samayah (not sure of the spelling so please forgive if I got it wrong) but may I ask why you don't use "just" lupin flour ? Is there a specific reason that it must be mixed with almond flour ? I have some lupin flour here but I don't know how to use it. Many thanks!
Hi! You were very close with the spelling of my name. It’s Samyah. The reason I use other flours is because Lupin flour is very absorbent also can have a bitter taste when you use too much and it’s higher in protein so you don’t want to consume too much protein on Keto. Lastly, it’s not like regular wheat flour and doesn’t behave as wheat flour does so I find the best results for recipes come when I combine it with other flours. I hope this helps. 😊

So hm, in the regular recipe I have, it calls for 1 and 1/2 cups of wheat flour and 1/3 cups of cornstarch (that gives it that light, melt-in-your-mouth aspect) and 1/2 cup powdered sugar. Hm, I have never converted a normal recipe into Keto. As it requires a cup of butter, I wonder if I could use say, 1 cup of almond flour, and 3/4 cup of lupin flour. I wonder if the bitter taste of the lupin flour would thuse be masked as I'd be using 2 tblsp of vanilla as well. May I ask what you would do ? Thanks for your help ! :-)

A very dry scrub pad with balkig soda--NO water. Just barely moisten the pad. Also works on tea stains, bottom of cookware, ets. Never fails.
