If you have one of those silicone mats to put in the bottom of pots for canning, you can use them here too so you don't have to listen to the bowl rattle or worry about it boiling too much and possibly breaking or cracking the bowl.

We aren't aware of how companies manufacture mint distilled water commercially. It's likely they add essential oils and blend it with distilled water as that would be simplest. However, steam distillation is actually commonly used to extract plant essential oils in the first place!
I would recommend glass lid and handle- no plastic pieces, just one more thing to worry about contaminating your water(high temperature steam bath) handles are made to be outside the lid. Also be aware of the type of metal you are using- use the Good steel pots not aluminum.

You need the bowl to collect the condensation from the upside-down lid. You're creating water vapor, then collecting that water. The water in the pot still has contaminants inside.
Best to put it on the lid once you see the water steaming. It's not really required but can help speed of condensation on the underside of the lid. Just make sure it doesn't leak through the handle screw hole.
Oh no! This can certainly happen if there is a gap in the threads and you have a lid with a handle in the middle. This definitely works best with side handles or a lid that is sealed completely.

The container in the middle will contain the distilled water and any oils from the plant material which will create a surface layer. You'll then use a dropper or syringe to collect the oil.

Oh no! Probably too much water and/or bowl wasn't high enough. You only need to generate steam, not a rolling boil.
