STRAWBERRY MACARON RECIPE
Ingredients
¾ Cup | 90g Ground Almonds
1 Cup | 125g Icing Sugar | Powdered Sugar
2 Egg Whites
½ tsp Salt
¼ Cup | 50g White Sugar
1 tsp Strawberry Essence
1-2 Drops Red Gel Colouring
½ Cup | 1 Stick | 110g Butter
1½ Cups | 190g Icing Sugar | Powdered Sugar
½ tsp Vanilla Extract
Instructions
Add the ground almonds and icing sugar or powdered sugar to a food processor and pulse 5-6 times until the almonds and sugar are well combined. Pour into a medium sized bowl.
Seperate the 2 eggs, saving the yolks for another recipe and adding the whites to another bowl. Whip your egg whites until they become foamy in a stand mixer or with a hand mixer and add the salt.
With the mixer on high slowly sprinkle in the ¼ cup of sugar. When the egg whites are at the soft peak stage add the strawberry essence and colouring. Whip again until they reach stiff peaks.
Add half of the egg whites to the dry ingredients and fold together until combined. Add the remaining egg whites and fold together until you can make a figure 8 in the bowl without the mixture breaking.
Spoon into a piping bag with a small round tip and pipe inch rounds about an inch apart on a lined baking sheet. Rap the sheet on the work surface 5 times to remove any air bubbles and leave to set for 30 minutes.
When you can touch the macarons without smudging them place into a 150C | 300F oven for 15 minutes. Cool completely before filling.
To make the buttercream beat the butter for 5 minutes with a hand mixer or in a stand mixer. Add the sugar in thirds, beating in between each addition until incorporated. Finally add the vanilla and mix until combined.
Pipe 1 Tablespoons worth of buttercream on top of half of the macarons and top with the other half, pressing until the buttercream reaches the edges.
Notes
Macarons are best the next day so make them a day ahead of when you want to serve them.
Change the flavouring by using a different type of essence or extract - 1 teaspoons worth.
Use anything you would like to fill the macarons, buttercream, ganache, lemon curd or fruit preserve.
Use the 2 egg yolks leftover from this recipe to make lemon curd and add 1 teaspoon of lemon extract and 2 drops of yellow colouring to the macarons instead of the strawberry.

Idk Idk Make sure you are using a clean bowl, glass or metal as any trace of fat from egg yolks or butter will stop the whites whipping up 😊

This actually worked! My third time trying and I finally made a perfect macaron. The first two times I used the Tasty tutorial and failed both times, but I decided to switch it up this time and used this video, and I do not regret it. My tip is to follow her instructions as precisely as possible, and look at the video before hand so you have an idea of what to do next. I’m thirteen, and I made a perfect macaron by myself with no baking experience, so you should also be able to accomplish this. Good luck!!!

I attempted to make macarons several times a couple of years ago, and kept running into problems. I watched this video this morning and made my first perfect batch -- at least by my standards : ) I really think the explanation of the final batter texture you are looking for is THE KEY that I was missing! So excited. I love macarons and I've hated that I couldn't seem to master them.

@@sski71 I would just skip the extract till you are comfortable making a meringue and making macarons. Instead you can and your extract and color to batter after macaronaging. If you do choose to to this I would recommend under mixing your batter before putting in flavor and color that finish mixing with the color and flavor.

Carina, I made Macarons for the first time...ever, and they turned out beautifully! I think next time, I will bake them for and additional minute. I need to work on a more consistent uniform size, but the flavor and consistancy was quite good for my first try . The butter cream filling, was fluffy and delightful. Thank you for your clear instructions!

the first and time i did it i just used egg whites right out of the fridge. this doesn’t work (or at least it didn’t for me) !! make sure your egg whites are at room temperature so they will turn white :)

These look absolutely beautiful. I've been searching all around the internet for a perfect and sort of simple recipe to make macarons for mothers day that is a month. I am really nervous as I can't practice making them as it is going to be a surprise. With this video I feel a little more like I got this.
I would recommend practicing if you can! They can be tricky but once you've made them once or twice you should be good to go 😊

Ahh~ i followed how you make macarons, but mine ended up being a fail 😭 BUT it’s my first time so I understand. The hardest part about this was the correct size of each macaron. Some of them were big and small and some of them were not even circles. I should’ve used a template but my printer was broken🤯. But and the end it, it was all cracked up, i would say 20% of them look fine. The taste, was really really sweet, maybe next time i will add less sugar. And mine was too doughy 😂 all in all, at least i tried 😬

There’s actually a difference between macarons and macaroons. Macarons are meringue based and can add more flavour and colour while macaroons are coconut based and the flavours and colours are limited. Have a nice day :)

I haven’t tried this yet but I will update when I have. This recipe also is pretty much dairy free other than the buttercream which is awesome because I love to bake but I have had a severe dairy allergy my whole life. You are a lifesaver!

heyy done beautifully!! have tired and i get cracks in the macron after baking whats the reason?
Google says it’s because you’ve either:
a. didn’t tap the air out of them well enough
b. oven temp was too high (my oven does this. 300 degrees my arse! It’s too hot. My six failed attempts and one lone success showed me I should have mine lower than the given temp like 280 and longe baking time instead....)
c. The meringue wasn’t stiff enough. I’ve heard some recipe vids recommend to keep whipping the meringue until it’s so stiff, it feels like a tough marshmallow.
Edit: I hope your second batch turned out well! I’m about to have my eight go at this thing (seventh time was not the successful one).
