    Everything piles up for most of the day until I come in. I started at 5 PM, but didn’t have much of this cleared out until after 8 PM. Join me for what was probably the most challenging shift I have ever worked.
    When you’re slammed and overloaded, target big items, and anything fast and easy that you don’t have to scrub so you can make space and clear the counter quicker.

      Ahh man, I work in a kitchen where we don't have a dishwasher guy, so I was stuck making meals and doing similar types of dishwashing all at once until 1am lmao

    First of all, you're an absolute beast in the dish pit. Total respect. Second of all, whoever is running that kitchen should be ashamed of themselves. It's absolute amateur hour BS to let dishes pile up like that throughout the day. If they don't have the budget to hire a carry-over dishwasher or staff enough cooks to tag in on dishes they shouldn't be running a restaurant. That mountain of dirty dishes is proof they're doing high enough volume to pay a daytime dishwasher.

    I’ve been working fastfood for like 4 years and they like putting me on dishes on very busy days I help out the line then I go to dishes very late and finish earlier with than most. clean dishes try my best. And watching you inspires me to

    I did this in college and at Bible camp, there's a rhythm to it and when you find it, and when everything is working properly, it can be fun. We always had a radio going and jammed out, sang etc, made it fun. DW is physically demanding but the sweat and the work is satisfying. The work itself is systematic, rhythmic, repetitive, so it's easy to find an autopilot and then it becomes meditative. Just get in there and knock it out. I looooove the process of creating order from chaos so these videos are really great. You are doing a great job and an important one!

      Certainly! I used to spray stacks of plates in between for the water to loosen things up, or soak em in a bucket. I treated the dishwasher like a sanitizer.

    All I know is his wage an hour is worth all of this struggle because most would not dare to attempt this. I have been through this exact same thing. This takes a very skilled mind. I always have music playing to make the time and journey more pleasant. Good job bro im cheering for ya. Much respect. They are very lucky to have you there.

    As the dishwasher you have a saying on how they bring those dishes and pots. You can ask them to remove labels so you can work faster. Also you can have a square tub with water for the silverware.

      No one takes off labels. The line cooks won’t do it. There are two busstubs at the far left, one with presoak for utensils, and another for ramekins.

    Much respect goes towards you, in the short time I worked in this position I always tried my best to keep my patience and organize everything to wash. However when it came down to a specific holiday I had enough of it, dishes were stacked beyond belief with bins full of them being put on the floor. Being asked to come in early for it and to leave as late as 3 in the morning, with little to no help I had enough after that shift. I hope you don’t overwork yourself, best wishes.

    I remember working as a dishwasher for my college (Liberty University). We had two commercial dishwashers, both were 4 compartments each. It was the most fastest pace I’ve ever been, some days I was loading while most days I was stacking and even doing silverware. I only worked for 4.5 months because I was still a student there.
    Now, I moved back to RV to do my career as an elementary physical education teacher.

    This job would give me anxiety! It's a neverending wave of dirty dishes. Some are saying this job takes no skill , but i disagree. It's not rocket science but without these guys you'd have a whole lot of dirty, broken dishes.

      I do this job currently. While the dishwasher is going im hand washing at the same time to make a dent in it all. You have to be competitive and organised. Most shifts start with a big FAAAARK!!!! 😅😅

      Restaurant dishes don't break that easily. As you can see, he's throwing with them, quite a lot. That's how things go on a daily basis in a commercial or institutional kitchen.

    I was a dishwasher and this is not an easy job...but if do not organize yourself it can be very overwhelming. I see you stacking and pushing towards the dishwasher, but there isn't footage of emptying the dish...do you have a helper? Love the speed

      I unload and deliver the washed dishes when I don’t have a partner, or when my partner is doing food prep. If I am solo, I cut those parts out of the video so you only see me standing there washing.

    I probably would not be a good disher washer. Because after each tray was rinsed of food particles I would have to rinse out the sink. Ultimately, taking forever to get the dishes done. Just being honest. Lol

      Update after watching this video straight through. Sir, I want to thank you. I realize in myself that if I worked this job I would be pissed all damn day and irritated beyond measure. Everytime you get so close to clearing that side counter, to bam it's full again. I do not have the patience for this. So thank you for allowing me to enjoy a meal that is cooked, and dishes are washed for me and just have the ability to enjoy a meal with family hassle free. ❤

      I really try not to be loud, but I just am, even when I’m chilling. So I have become aware of that. It’s unfortunate that this, of all my dish vids, seems to have gained traction because it’s definitely not my best performance. It’s just what the title and thumbnail says. But yes, being upset is not good, then people are afraid and don’t want to be around you. Not the kind of working relationship I want to have.

    I worked at Camp Lejeune Oficers Club in the dish room.
    For your area to work for you there has to be organizations. Have containers with water for the silver ware to soak.
    I love these videos but get upset with the lack of organization.

    Spray anything that'll be sittin there for a while. It keeps everything loose and makes everything so much quicker to rinse and move through

      Or don't spray at all, like we do at work. The prewash zones of our dishwasher is able to do all the work on itself. It will make work so much easier. In this video, you can't see the dishwasher, but it's sure a rack conveyor model. They usually have a pre-rinse section built in, so there's no need for this excessive spraying like this guy is doing. He's even spraying off things which are not visually dirty.

      @kokkieamiga It’s a tunnel machine with a track that pulls the racks in. No prespray is not an option, the machine is not the greatest, and needs all the help it can get. The water in the machine is recycled so I try to keep out as much food particles and sauces as possible. I’m almost proud of that fact, there’s barely any food particles in the machine filters/screens after hours of washing.

And I know how the machine works, as we have a couple of those at work too. It's sadly that yours isn't so great. But still, IF you still work there, it's nice if some mechanic could look at it some day. Btw, what brand and type is the dishwasher from? I may be able to find it somewhere on the internet/youtube.

    What is the purpose of shaking the tray as you spray the plates? I've put away dishes when someone was going this fast and about 20% of them were still dirty.

      Moving the rack around to help loosen food particles on the plates, at least that’s what I hope. This dish machine itself is very bad at cleaning the plates and pots. It’s 90% prepping - scrubbing and spraying before entering the machine for everything to come out clean. That’s why I use so much water during spraying. 🚿

      @@electropsychosis I see, but maybe you should ask your boss to ask to have it maintained. This is not how it belongs to work. Maybe the detergent dosing system doesn't work well, or the nozzles are clogged with food particles or the conveyor speed is too high. Oh wait, I think that I've read in a comment, that you aren't working there anymore are you? Oh and I think you can forget about that, to get the particles go away faster by shaking the racks. What was more effective, is to pre spray stacks of plates from the side and let it soak for a while before racking them.

      Sometimes I don’t just shake the racks but lift each plate quick then drop it back down in the slot because food gets stuck on the rack if the plate is resting on it. When I have a lot of stacked plates on the counter, I do hit them all with the sprayer before racking and spraying again. I can’t save stacks of plates on the counter too long, the FOH will complain if they have little or no space to drop dishes. The goal is definitely to keep the counter as clear as possible, if not at least organized. Racking and getting everything in the machine ASAP is definitely the M.O. If dishes sit too long on the counter, the KM will send one of the cooks in to clear out dish. The slow dishwasher will suddenly and unexpectedly get a “smoke break” which is a cook tactic to get him out of there for the time being until an experienced cook, one that came from dish, clears out the pile up and gets it under control again.       一站就是10个小时或更长时间,中途喝点水加上洗手间的时间,最多10分钟休息。经理还在旁边催促:!:加油!最低的工资加残渣剩饭。😢

      @@annetteslife Then come working as a dishwasher in a hospital in The Netherlands and you will approximately get 2400 EUR (2.547 USD) based on 36 workhours per week. And you never work that fast like this guy here and with much better state of the art equipment.

    It is best to always do all the big stuff then leave all small stuff for the end I been doing dishwasher for already 8 years its not recommended it very easy once you are used to be standing for hours going up down left right but its a problem if you are rusty dishwasher those who quit and rest long months and come back and barely handle the pain of standing for hours and you legs and spine hurting

      If I don’t have a partner, I will stop washing and unload the racks myself. It’s very common actually when restaurants are short staffed or trying to watch their labor costs. In those times when I have to unload the racks, I cut the video until I return so it’s better for the viewer. Thank you for watching. I appreciate it.

      Practicing makes perfect is the goal to achieve. And throwing with the dishes so much, that they won't break, but fast enough, to keep up the pace to get the work done in the available time.

      I love your analogy and couldn’t agree more. We can fly ourselves into space in a ship we built out of scrap metal, but can’t make a vending machine that doesn’t get jammed. 😆😎

    Dishwasher isn't shown washing hands or wearing gloves to pick up clean dishes. The red bucket he dumped should have been sanitizer water or soap and water with a brush or scratch pad to take the difficult slfood off

      To some level, the speed of working surely depends on it. If you put in dishes slower, you'll not be able to run through so many dishes, when speed is needed to help getting the counter empty as fast as possible. Easier would be, to first stack dishes sort by sort, while in the meantime to keep the dishwasher running by washing through larger items like utensils, pots etc. To 1. make space, and 2. a more organized work space with more space to put new dirty items.

      Everything goes into the dish machine, which washes with detergent at high temperature. That is step 2. The video shows step 1, racking and spraying, which helps step 2 to work more effectively.

    I did not enjoy watching him wash these dishes. He's flinging water everywhere. Slamming dishes 11:50 Station and him is dirty. rude to coworkers. I just watched another video where the guy had twice the dishes but was more organized. Keep up the work

      Thanks for the critique. I forgot to record the parts where employees are piling up the dishes anywhere they please - not doing their part to keep things organized, allowing things to fall, leaving dishes on the actual floor in front of the dish room so they can just walk away instead of organizing it on the counter, throwing dirty utensils and ramekins into the bins, which causes the dirty pre-soak water to splash all over the clean dishes I just washed and stacked on carts inside the dish room.
      “Coworkers” letting dishes pile up for hours on carts at two other floors of our restaurant besides the floor the kitchen and actual dish room is on. I have to leave the dish room with no partner while things pile up even more so I can get the carts of dishes myself or I might never go home at the end of the night. 3,000 + covers Friday and Saturday nights and I’m the only dishwasher. Countless times.
      People cry about a little bit of water splashing on them, so I’m letting them know since some are clueless and have to be told, to avoid the direction I’m spraying in. I need the sprayer to wash the dishes, nothing I can do about that. Nothing I can do about where the sprayer is located and the direction I have to spray in, I didn’t install the sprayer. But I did fix the pipe myself one night without the help of a single manager or I wouldn’t have had a sprayer at all that day and moving forward.
      The water pressure on this sprayer is weak to say the least, nowhere near as strong as I need it to be, so the splashing water is very minimal, believe me. It would be a lot more if I had a proper sprayer. I don’t have five minutes to stop spraying to wait for someone to drop three dishes. Understand the volume I’m dealing with, servers know their sections, that’s all they know. I get dishes from everyone’s sections, the entire restaurant, by myself with no partner. Through no fault of my own, coming in to this piled up mess because no one could do anything about it earlier, don’t know how to schedule or retain staff, none of which is my fault or fair to me.
      The dishes make noise, so do the utensils. They’re not plastic. No one has ever complained to me about things slamming. Welcome to the sound of a huge restaurant kitchen and dish room. The only time I’ve broken a plate is dropping it by accident. I get stacks and stacks of plates offloaded from carts all at once. That gets dropped and makes noise. I don’t care about the noise, I care about surviving the night, and the line having the plates they need so they can operate. It’s not going to be pretty, it’s not going to be quiet, we’re not in a library or at a meditation retreat.
      There’s no respect for the dish washer here, and I dealt with this place for years before leaving. I got multiple commendations and awards here, a wooden plaque that’s on my bedroom wall today, and the sprayer head from this video, finally broke one day, that’s on my wall next the plaque.
      Just days ago, I got a promotion, raise, and an award at the a new restaurant, about a year and a half now. Regardless of what some may perceive or think, I do love my job. If I didn’t care about it or the restaurant operation, I would not be this intense, and my only regret is coming off as unprofessional at times when I’m under immense pressure to keep up and perform.

      @electropsychosis congratulations. I do understand the volume of everything and your right they do just throw anything up there. Even if it was already clean. Yes I know silverware makes noise just seemed overly exaggerated lol.

      As a person who is retired from 14 years of dishwashing, you would be frustrated as well if your coworkers were constantly disorganizing the dish pit. Cooks and servers have no respect for the dishwashers. Respect for the dishwashers is low on the totem pole hun! I would love to see you in the dish pit

    物の扱い方雑過ぎる
    皿プラスチックなのか
    陶器ならいつ何個でも割れる扱い方
    テキパキ片付けなきゃならないのは
    わかるが雑過ぎてここで働きたくない
    と思ってた
