Me too! I feel comfortable learning this way since I prefer to learn authentic cookery. Mr. Surendra, I have a nerdy question. . . so I can learn the most authentic method possible. I found some rampe online, but as dried tea leaves possibly from Thailand and another as a powder in a spice jar possibly from Malaysia. Do any of these details matter? I'm sure it's not a silly question because when I was learning Indian (from India) cookery, I discovered that dried curry leaf is bitter and tastes nothing like fresh curry leaf. Well, the curry leaves that I was able to get tated that way. The pandan that I found online is certified organic which is what I prefer, so that limits my options too. Thank you!

If you want to grind spices but all you have is your coffee grinder: clean out as much of the coffee as you can then grind a handful of rice. That should get it pretty clean!
As someone from South India, I'm also quite protective of the black pepper I get from my grandmother every time I visit India. I'm currently in India and watched the fresh peppercorns go from red to dark brown as they dry in the hot sun

ohh this is such a great video.....I will share the recipe for North Indian garam masala powder in a couple of days here. Better still I will find a video I saw on YT ages ago that was very detailed and very good. This spice mix goes into a lot of the North Indian curries. As Rajeev mentions, the advantage of making it yourself is you can adjust the spice, aroma and heat to your liking. EDIT. Here is the link. I hope Rajeev doesn't mind my linking to another RUclipsr....if it's not acceptable please go ahead and delete this comment. The video is in Hindi. Please turn on English subtitles. One more thing - In north Indian food, red chillies are added to curries separately i.e. in addition to the spice mix or garam masala. Also many folks prefer to add chillies in form of freshly ground green chillies instead of red chilly powder. And garam masala is added separately. Since it's already roasted and ground please remember - this spice mix should NOT be cooked too much. I am from south India(Tamil Nadu). Here this is called Kulambu Milagai thool. My family makes a simpler version of this with just coriander and chilli which is more versatile than this mixture. And we don’t use Pandan leaves at all. That is totally a south East Asian thing.

I just made this Jaffna chili powder using his recipe but with a little less of the red chili powder. Pandan is easy to get here in the Philippines and I have a curry tree in my garden, so I leave those out of the mix and add them upon cooking. I'll be making his chicken curry recipe soon!

I am totally not into Rajiv's chili powder, because I can't eat very hot things. But I started following him because of an antique shop or how to wash a sweater made of wool videos. And somewhere after so may Videos, I understood how important it is, to put your mind, love and time into the things you do. To do less, have less, but what you do or have, to give the full attention and importance to it. Thank you!
When growing up I would often cook with my mum. She made everything from scratch. Picked up her herbs from the fields around the house and dried them. Picked up different fruits and vegetables from the garden by the house. Everything smelt so beautifully. When you spoke of the smell of the spices roasting, you reminded me of my mum, who is no longer around. Also, you reminded me how important smell is in the process of cooking and eating, and how it can enhance the experience to another level. You are truly inspirational Rajiv ❤️

Milagai tul quite literally means chilly powder ( by using only dried red chillies) , but with the addition of the other spices it’s a curry powder .

These were gold, very old traditional bracelet called 'locking bangle' and it is now becoming fasion again. I got it from my grandmother I am Tamil srilankan by the way

I just made this Jaffna chili powder using his recipe but with a little less of the red chili powder. Pandan is easy to get here in the Philippines and I have a curry tree in my garden, so I leave those out of the mix and add them upon cooking. I'll be making his chicken curry recipe soon!

I am totally not into Rajiv's chili powder, because I can't eat very hot things. But I started following him because of an antique shop or how to wash a sweater made of wool videos. And somewhere after so may Videos, I understood how important it is, to put your mind, love and time into the things you do. To do less, have less, but what you do or have, to give the full attention and importance to it.

When growing up I would often cook with my mum. She made everything from scratch. Picked up her herbs from the fields around the house and dried them. Picked up different fruits and vegetables from the garden by the house. Everything smelt so beautifully. When you spoke of the smell of the spices roasting, you reminded me of my mum, who is no longer around. Also, you reminded me how important smell is in the process of cooking and eating, and how it can enhance the experience to another level. You are truly inspirational Rajiv ❤️
