I will show Erica this clip tonight :) In 17th century England the half mug half bowl was called a "porrenger" and we made them for years in stoneware but Erica adopted one for her morning coffee years back and took to making them ever since ..I think the one you have she made while visiting our pottery teacher, Mrs Karl , at High Mowing School in New Hampshire :) ..

I didn’t know the difference between all ways you can order coffee on the menu and I lived in Italy for 4 years, traveled a lot and have a collection of coffee making tools. The 2nd cup and saucer you showed us is Staffordshire gaudy ironstone from the 1840s. It caught my eye immediately! The exact pattern is called "Half-ripe strawberry." I have a pretty substantial collection of it. I inherited it from my grandmother and I've been adding to it over the years.

Rajiv, I think you might appreciate Liz Steel’s ritual of sketching her coffee every morning in watercolour. My kitchen is a little bigger and when Covid lockdowns hit I immediately purchased a little Italian espresso machine. Not the completely automatic kind but the kind with satisfying switches and that comes apart and can be repaired. I got quite good at creating a heart in my flat white but these days I’m in such a rush to get out the door in the mornings that I haven’t been making the effort. This video is a nice reminder to find that time to slow down again. Thank you.
I grind beans using my great grandmas wall mounted coffee grinder. Can adjust the grind from fine to coarse. Not much of a milk drinker so no foam, but to me, cranking the grinder every morning is akin to the way you describe how the cup feels in your hand❤❤❤❤❤
What a wonderful heirloom! The functional items that we can make part of our daily rituals and routines are, I find, the most special. In my kitchen, there is a wooden cooling rack from my great-grandparents' kitchen. We designed our kitchen cupboards to accommodate it, and it makes baking special every time.

Barista secrets revealed! Thanks for a great video. Your various cups made me think of the cup I use every morning. It's a mass-produced tourist souvenir from Cafe du Monde in New Orleans. What makes it special is that after Hurricane Katrina and the levee failure flooded big swaths of New Orleans in 2005, the school of engineering at Rutgers University lost their facilities. The Arizona State University Foundation (where I worked at the time) remodeled part of a building they owned and invited the Rutgers students to continue their classes there until they could return to their own campus. When time came for the students to leave, they gave us a bunch of little presents, including Cafe du Monde coffee cups. A nice memory to pair with morning coffee.

I love coffee and I've been wanting to learn how to make latte art for the longest time but seeing that this video was 30 minutes long, I didn't think I'd watch this through; but I have to say this was absolutely amazing! Great work!!
I'm going to try this. I do have a semi-fancy machine, so it foams the milk for me, grinds the beans, etc. One thing I do is put a little over a teaspoon of maple syrup in the milk before frothing it. It's a wonderful addition, and doesn't seem to affect the frothing at all, and it sweetens the coffee sufficiently with a nice flavour, as I don't care for the taste of regular sugars.
I have the same stainless steel Alessi moka pot and I love using it! Two points: 1) The water level should be right below the safety pressure valve (this is true for all moka pots..) 2) Last year I read that using hot water in moka pots instead of cold water results in better coffee, so I’ve been doing that since. (Although I can’t tell the difference..)
thank you for pointing out the correct water level for moka pots. afaik you have to keep the level below the valve. If you go over that, the valve is can't release extra pressure, which can be quite dangerous.
I tried hot water and paper filters but I like the taste better with cold and without like Mr Bialetti intended. I think Hofman is overcomplicating things.
I want to buy the Alessi Moka Pot that Rajiv was using, but not sure on the size. I believe he was using a 6 cup. Looking at the pictures online, from the 1 cut to the 12, they all look the same. Do you know the size he was using?
Hi Rajiv, could you one day touch on the safety of using antique dishes and kitchenware? I love collecting old mixing bowls and teacups but I do worry about lead and I'm curious what your philosophy is on this.
Rajiv has made many videos on antiquing and collecting antique tableware. I forget in which video he discusses this, or whether it's on this same channel or on HGTV's, but he does discuss that he researched lead content in certain ceramic glazes and only uses certain items for decorative purposes as a result.
Why am I not surprised that you have mastered another once-esoteric art form? And of course we learn to appreciate the pour plus the latte cups. Now I’m motivated to use those delicate china coffee cups inherited from my mom, acquired by my dad in Italy. Thanks for this gift of remembrance.
I love this video! I was smelling coffee while you were showing how to prepare it! One little comment, the "cortado" is the Spanish way to make a "solo" (expresso black) with a touch of milk, and amacchiato is the "café con leche", half/half. If you ever go to Canary Islands, ask for a "barraquito leche y leche" is a cortado with half milk and half condensed milk, it is just delicious! Enjoy it!

I have absolutely no desire to be a barista. I’m a stay at home mom lol but this video was so well presented and so lovely to listen to that I am going to try my hand at making myself a cafe quality drink to enjoy while the kids play. Loved it! I was a barista in the very early 80’s on the West Coast. Hardly any ‘syrups or fancy madeup drinks. We did the bigger foam, it’s true. But we all learned to do a good basic espresso shot. That knowledge serves me well, all the way to now, 40 years later! Thanks, Rajiv.

Why am I not even surprised that you are a certified barista 😂. I restored an old Peugeot coffee grinder and make my coffee with it 😊. It's a slow meditative process whether it's moka or plain long drink. The vessel is so important to me too. Like drinking matcha ☕. It's all part of the process 🤩

I didn't think that I needed this ... but you have saved me from a foolish and unaffordable benchtop coffee machine purchase and I am now busy searching online for manual milk frothers. I only drink espresso but like to be able to serve my visitors what they like to drink, and in about three years time I might even be able to do so with latte art. Thank you!
I have no interest in learning how to do latte art, but I very much appreciate how lovely it is when prepared by expert hands. I also make my coffee drinks at home and I have a ridiculous collection of manual coffee making equipment (I have no counterspace for machines aside from a grinder, either) as well as a wide range of favorite cups to enjoy my drinks in. Ok I didn’t want anything for Christmas and now I do. I have a Breville Barista espresso machine but there is something so visceral and relaxing about this. Adding a mocha pot and manual frother to my list!!
Pro tip Rajiv!: something I recently discovered is almost boiling the water before adding it to the moka, then with a low flame let it flow out very slowly. Pulling it off the stove before it starts angrily spitting, catching it when it’s just quietly beginning to purr, will ensure that the coffee is less bitter and more complex and profound. It makes such a difference! Also adding the water to just below the valve level. Give it a go! 🤗
I have no idea why your video popped up on my feed, but I sure enjoyed it! When I lived in the city, I visited a local coffee shop weekly for my 'special coffee time'. When I moved back to a rural town I grew up in, to care for my parents and get a horse, my son asked what I would miss most about the city; I said my special coffee! and laughed it off. That Christmas he got me a coffee grinder with my fav coffee beans and a cute, tiny espresso maker with a steamer 'wand'. It has worked great for the past 20 years but I'm always thinking of the day it gives up the ghost. I have never seen the 'manual' type equipment - guess I know what is on my Christmas list for this year! Thanks again!

One of my 2024 goals was to take more time and enjoy the process of making coffee for myself. It has become a calming ritual that I look forward to daily 😊I also don't have a fancy coffee machine, but froth my milk by hand, choose one of my 3 favourite mugs (with sentimental value) and mindfully sit and enjoy my beverage. I love coffee and I've been wanting to learn how to make latte art for the longest time but seeing that this video was 30 minutes long, I didn't think I'd watch this through; but I have to say this was absolutely amazing! Great work!!
I'm going to try this. I do have a semi-fancy machine, so it foams the milk for me, grinds the beans, etc. One thing I do is put a little over a teaspoon of maple syrup in the milk before frothing it. It's a wonderful addition, and doesn't seem to affect the frothing at all, and it sweetens the coffee sufficiently with a nice flavour, as I don't care for the taste of regular sugars.
I love making maple syrup sweetened whipped cream for my London fogs. So good!!!
I was a barista in my teens and twenties. I loved it! You are buzzed all the time and it's good for socializing.
I have the same stainless steel Alessi moka pot and I love using it! Two points: 1) The water level should be right below the safety pressure valve (this is true for all moka pots..) 2) Last year I read that using hot water in moka pots instead of cold water results in better coffee, so I’ve been doing that since. (Although I can’t tell the difference..)
thank you for pointing out the correct water level for moka pots. afaik you have to keep the level below the valve. If you go over that, the valve is can't release extra pressure, which can be quite dangerous.
If you use hot water, the process is shorter because the liquid will boil faster.
I tried hot water and paper filters but I like the taste better with cold and without like Mr Bialetti intended. I think Hofman is overcomplicating things.
I want to buy the Alessi Moka Pot that Rajiv was using, but not sure on the size. I believe he was using a 6 cup. Looking at the pictures online, from the 1 cut to the 12, they all look the same. Do you know the size he was using?
Hi Rajiv, could you one day touch on the safety of using antique dishes and kitchenware? I love collecting old mixing bowls and teacups but I do worry about lead and I'm curious what your philosophy is on this.
Rajiv has made many videos on antiquing and collecting antique tableware. I forget in which video he discusses this, or whether it's on this same channel or on HGTV's, but he does discuss that he researched lead content in certain ceramic glazes and only uses certain items for decorative purposes as a result.
Why am I not surprised that you have mastered another once-esoteric art form? And of course we learn to appreciate the pour plus the latte cups. Now I’m motivated to use those delicate china coffee cups inherited from my mom, acquired by my dad in Italy. Thanks for this gift of remembrance.
I love this video! I was smelling coffee while you were showing how to prepare it! One little comment, the "cortado" is the Spanish way to make a "solo" (expresso black) with a touch of milk, and amacchiato is the "café con leche", half/half. If you ever go to Canary Islands, ask for a "barraquito leche y leche" is a cortado with half milk and half condensed milk, it is just delicious! Enjoy it!

Loved it! I was a barista in the very early 80’s on the West Coast. Hardly any ‘syrups or fancy madeup drinks. We did the bigger foam, it’s true. But we all learned to do a good basic espresso shot. That knowledge serves me well, all the way to now, 40 years later! Thanks, Rajiv.

Why am I not even surprised that you are a certified barista 😂. I restored an old Peugeot coffee grinder and make my coffee with it 😊. It's a slow meditative process whether it's moka or plain long drink. The vessel is so important to me too. Like drinking matcha ☕. It's all part of the process 🤩

I didn't think that I needed this ... but you have saved me from a foolish and unaffordable benchtop coffee machine purchase and I am now busy searching online for manual milk frothers. I only drink espresso but like to be able to serve my visitors what they like to drink, and in about three years time I might even be able to do so with latte art. Thank you!
I have no interest in learning how to do latte art, but I very much appreciate how lovely it is when prepared by expert hands. I also make my coffee drinks at home and I have a ridiculous collection of manual coffee making equipment (I have no counterspace for machines aside from a grinder, either) as well as a wide range of favorite cups to enjoy my drinks in. And yes. It is almost a mental problem, how I have to wait for the cup of the day to "speak to me" before I make my selection :D

Pro tip Rajiv!: something I recently discovered is almost boiling the water before adding it to the moka, then with a low flame let it flow out very slowly. Pulling it off the stove before it starts angrily spitting, catching it when it’s just quietly beginning to purr, will ensure that the coffee is less bitter and more complex and profound. It makes such a difference! Also adding the water to just below the valve level. Give it a go! 🤗

When I lived in the city, I visited a local coffee shop weekly for my 'special coffee time'. When I moved back to a rural town I grew up in, to care for my parents and get a horse, my son asked what I would miss most about the city; I said my special coffee! and laughed it off. That Christmas he got me a coffee grinder with my fav coffee beans and a cute, tiny espresso maker with a steamer 'wand'. It has worked great for the past 20 years but I'm always thinking of the day it gives up the ghost. I have never seen the 'manual' type equipment - guess I know what is on my Christmas list for this year! Thanks again!

One of my 2024 goals was to take more time and enjoy the process of making coffee for myself. It has become a calming ritual that I look forward to daily 😊I also don't have a fancy coffee machine, but froth my milk by hand, choose one of my 3 favourite mugs (with sentimental value) and mindfully sit and enjoy my beverage. This (as with most of your vids) really resonates with me!

Thank You Rajiv, So many things that I did not know about making a coffee. My daily ritual is a capuccino in the morning and I happen to have a nice Italian coffee pot. I also never drink coffee in the afternoon just the morning. I may try the art part of the coffee making I have always wanted to know how to do this and you explained it quite well the art of getting the milk just right when you heat it.
