    Made it! A bit dry, but would be good with a cup of tea. The matcha flavour is very subtle, but I used 40g honey instead of 50g maple syrup, and I can taste more honey than matcha. I had to add a splash of water for extra moisture, could have added a tiny bit more because of the oat flour. I shaped them by hand, got 25 square-is pieces, about 2×2cm.
    To be fair, my matcha was at the end of its life, not as vibrant green as it should be, so might be less flavoursome too.
    Edit:
    After a day or two, the flavours have come together really nicely. It's very morish, and great healthy snack :) it was is a covered container, but doesn't feel as dry anymore.

      Anna, I'd agree with you that oats & honey behave more as hydrophilic ingredients in many preparations according to my own kitchen experience. Also, my best honey type in making perfect sugarless gf cakes is oak honey!
      Why not some fruit juice (eg. orange juice) Instead of water for some extra moisture in your final cookie batter?

    もう毎回そうなんだけど、作る過程も焼き上がりも美しくて、味も大信頼(今までRyoyaさんレシピ試して全部めちゃくちゃ美味しかった)。ヴィーガンのクッキー生地ってポロポロしがちだったけど、こうやれば形成しやすいのかーって目からウロコ。明日早速作ってみます。

    Edit : i already tried the recipe, and it's very good. The only difference i made was replacing matcha with chocolate powder, and also i used cane sugar instead of maple syrup.

    The rice flour gives it such a nice chewy mochi texture! i had no maple syrup and used brown sugar instead. added a little bit of water to the batter because it was too dry (lack of the syrup). That worked well. delicious!

    Thank you. I no longer, for quite some time now , feel inclined to eat sweet foods. Figs and maple syrup,( my daughter and mate produce maple syrup in far Northern Vermont ), or a bit of honey from time to time. This truly is something i will create. Perfect blending.
