- Appam is a famous snack recipe in India.
In Marathi we called it Aappe.There are two main types of aapam spicy aapam and sweet aapam.
And spicy aapam are prepared with different ingredients and various methods.
In this video I am showing spicy mix dal and rice aapam
with traditional fermantation method.
So try this..

Ingredients:
In first step:
. 3 cup rice(Chaval)
. 1 cup bengal gram(chana dal)
. 1 cup black gram (Urad dal)
. 1 cup green gram (moong dal)
. 1 tsp fenugreek seeds(Methi dana)
In second step:
. 2 chopped onions
. 7-8 chopped gralic cloves
. 7-8 chopped curry leaves
. 3-4 chopped green chillies
(as per taste)
. chopped coriander leaves
. musterd seeds
. pinch of asafoetida(hing)
. salt as per taste
. 3-4 tbsp oil
Method:
. Mix all grams(dal) and fenugreek
seeds together in a bowl.
wash it 2 times with water,
then add required amount of
water in it.
. Take rice in separate bowl and
wash it properly, add required
amount of water in it.
. Cover both bowls and allow to
soak dal and rice for 4-5 hours.
. After 4-5 hours drain water and
grind soaked dal for a fine paste
and grind soaked rice for coarse
paste by adding some water.
. Now mix grinded dal and rice
together in big bowl or utensil.
. Cover with lid and place at warm
place and allow to ferment for
10-12 hours.
. After 10-12 hours,
add onion,garlic,salt,coriander
leaves,curry leaves in this
fermented batter.
. Heat 1 tbsp oil in a tadka pan
and add musterd seeds and
allow to crackle it.
. Add hing and switch off flame,
then add chopped green chillies
in hot oil.
. Tempering is ready,pour it in
batter and mix all ingredients
gently.
. Tempering gives nice taste and
spongyness to aapam.
. Check for medium thick
consistency of batter.
. Now heat the aapam mold pan
and add little oil in each mold.
. Then switch flame low and add
batter in each mold with the help
of spoon.
. Cover the pan and allow to cook
aapam for 3-4 minutes on
medium flame.
. After that add little oil on upper
side of appam and turn the
side of all aapam.
. Again allow to cook it for 3-4
minutes on medium flame.
. When cook properly from both
sides,transfer it in serving plate.
. Aapam are ready,always serve hot
with coconut chutney, peanut
chutney.
Tip:
. In witnter season cover batter
utensil with thick cotton cloth
while fermentation,it will help
to ferment batter easily.
. You can store fermented batter
in fridge for 1 day in a airtight
container before add salt and
other ingredients.

To begin with " Happy Ganesh Chaturthi " Have prepared Aappe's before but after watching your video, decided to give it a try. Came out soft n spongy, but instead of adding raw garlic into the batter, I added into the Tadka along with the Mustard seeds , chopped green Chilly and off course the Hing and poured into the batter. Jakkas ! No need of Chutney. 😊

तुम्ही सांगितलेल्या पद्धतीने अप्पे बनवले.खूपच चविष्ट व लज्जतदार होते. ह्याच्यात तुमचा सहभाग जास्त आहे. कारण तुम्ही छान व सोयिस्कर रितीने सांगता. मला विचारायचे होते कि अप्पे च पीठ थोड वेगळं काढून फ्रिज मधे ठेवलं होतं .त्याचे उत्तपम बनवता येतील का?
हो मीठ ,भाज्या घालायच्या आधीच काढून फ्रिजमध्ये ठेवा..3 _4 दिवस टिकते
