Altitude is potential energy where as speed is just energy. It's better to be high with more potential energy than low with your energy already at max.
what I think you’re getting at around 8:10 is that energy can be both potential and kinetic. potential energy stored up by climbing and kinetic energy gained by flying level or in a slight dive to increase speed. being completely out of either one will usually get you sent back to the hangar. from one student to another, good luck with your exams!

How you wanna deal with the all aspect shitslingers is simple, you fly headon at them on LOW throttle (50-70%) and preturn slightly to one side of them (about 45° in relation to the enemy). There's two things that can happen here, either they aren't able to get a lock at all, or if they do get a lock and launch, you want to turn under and into the missile, if you did it well enough it will miss
