Perfect recipe and idea, i do it with two change ,1soak rice and dal together instead of using rice flour and then dont put soda rather if you grind it ald leave for some time it become crispy, because the rice granular in batter add crispyness

That's a nice trick mam, but the flat spatula also has few drops of water at the back side, which may be little risky, while putting the vada in the oil.

Your spatula trick was brilliant ! I used a variant of that using a round, flat, metallic disc to accumulate the batter, flatten it, pierce a hole through it and then drop it in the oil. Yet, I was scared that the hot oil was dangerously close to my fingers. Your spatula technology is simply more elegant and safe. I have always had trouble aerating the batter, despite battering it - pun intended - for many minutes. I used the same technique as you did but somehow, they never became fluffy. You can put little batter in water if it floats on top it will have enough air incorporated in it... and one more thing while shaping the vada on spatula dont press it and flatten it from top... Take the batter and place it on spatula, make a hole at the centre and fry..
Try soaking the urad dal in luke warm water and place it in the oven with light on. We live in a cold area too where the fermentation doesn't occur by just soaking it outside

Can be made without baking soda if you keep it a little longer for fermentation. I learnt a new trick from you to get them using flat spatula. That's a neat trick and safe too
It shd not be kept to ferment ...this video method is the perfect one...beat it properly for softness n a pinch of soda for the crispy outside taste..awesm loved it.
Hi Mridula, I tried the vadas. I grinded them without water, and while beating since it ws too hard, I added v little water(1 tbsp), and it ws v difficult to beat the batter. However I kept beating for almost half an hour but didn't feel it was fluffy so finally added a pinch of soda and beat it again. At this time also I didn't feel it ws fluffy so shaped them and fried. How do you decide how much water to add as I understand that shape will be good only if water isn't too much, moreover, if we add too less water like I did, it's so difficult to beat the batter to perfect consistency. Here are some points that will help. 1) Soak dal for long time so that it will absorb maximum amount of water. 2) After grinding the batter add in salt so that the batter will release its water and it will become easy to beat. If you find it difficult to beat it using spoon then do it with hand. Check by putting little batter in water. If it floats then it is ready. 3) After beating the batter, you can use little rice flour or urad dal flour to adjust the consistency of the batter i.e to make it thick.
