- Birmingham Balti - native to the English city Birmingham is a curry made and served in a “Balti” which is a thin pressed carbon steel pan similar shape to a wok and the curry can be chicken or lamb.
Ingredients
- 1 red onion, diced
- 5 cloves garlic, finely diced
- 1 green chilli, diced
- 1 red pepper, diced
- 500g (1.1 lbs) chicken breast, diced
- 4-5 tbsp vegetable oil
- salt, to taste
- 3 tomatoes, diced
- 1 tsp chilli powder
- 1 tsp paprika
- 1/2 tsp turmeric
- 1 tsp cumin
- 1 tsp black pepper
- 200ml (about 3/4 cup) chicken stock
- 1/2 tsp kasuri methi (dried fenugreek leaves)
- naan, to serve
Method
1. Heat the vegetable oil in a Balti pan (or a frying pan) over high heat. Add the onions, garlic, green chilli, and a pinch of salt. Cook for 3 minutes, stirring frequently.
2. Add the red pepper and chicken to the pan. Stir well and cook for another 5 minutes before adding the tomatoes and spices (chilli powder, paprika, turmeric, cumin) and mix well.
3. Add the chicken stock and black pepper. Continue cooking for an additional 5 minutes.
4. Once the cooking is complete, sprinkle kasuri methi on top. Serve hot with naan bread.

I lived in Birmingham when at Birmingham College of Food. There were many beers drunk and many a Balti devoured 😁. A great city to experience diversity and different cuisines.

Colombian fan here - would you please consider making sancocho? It's a very hearty stew that began life as a Spanish dish, and its many variations are a staple across Latin America, including the countries of Colombia, Venezuela and the Dominican Republic. If you like soups and stews, it's like your stomach is getting the biggest hug. Very delicious.
OMG I'm Chinese and I just looked up this dish it's very similar to our 玉米排骨汤 (corn with rib soup) where we stew chunks of corn, ribs and other root vegetables together! We use more ginger, anise, szechuan pepper and scallion type of flavors, but I'll definitely try making it your way! 😋
@janeliu5316 I just looked up your dish - you're right, the look is quite similar, and the flavors in your soup sound very beautiful. Sancocho is hearty, rather than spicy (Colombian food in general doesn't contain much heat at all, but is very savory with beautiful layers), but the element of heat to your dish is quite intriguing to me, and adds a different dimension of flavor - I would love to try it!

Never heard of this before. Lived in England for 4 years. Worked as a chef for over 20 years. I even worked with a chef from Birmingham while living in Australia (World Expo 88). Working with these clever English and Australian chefs in beautiful Queensland ranks as one of my happiest life experiences. Of course I am trying this. Getting the actual bowl because.

Oh my god. An English dish with actual spices. I thought I would never see the day.
If you've got a free day and want something to stock the freezer, give some homemade tomato sauce a try. My family's half Sicilian-Itallian, and we use a total of 12 cans of tomatoes (6 cans of 28oz tomato sauce and 6 cans of 28oz crushed tomato or tomato puree). Our family swears by Tuttorosso brand cans, but it's up to you. Coat the bottom of a very large pot in olive oil, then thin-slice an entire large white onion and two spoonfuls of diced garlic (about a full head if you want to cut fresh). Once the onion and garlic begin changing color, add the sauce. Each can you add, you'll want to lightly run tap water around the inside of the can to collect, before pouring that into the pot as well (only use enough water to clean the can). Repeat for all 12 cans, with a small can of tomato paste saved for halfway through the cook. Now comes the fun part. Bring it to a soft bubble and set a timer. For the next 6-8 hours, you're going to stir the sauce very well every 5-10 minutes. The trick here is to keep it JUST hot enough to bubble, but not too high to burn the bottom of the sauce. It is imperative you don't forget to stir every 10 minutes minimum, to avoid burning. Once the sauce burns once, you've ruined the whole thing. At around 3 hours in, you can add the tomato paste. After around 6 hours you'll notice the sauce has lost most of its bite and bitter. The slow cook burns off the acidity and leaves you with a thick...delicious...naturally sweet tomato sauce. Keep one in the fridge and freeze the rest (make sure to pull the air out of any container you put it in for a longer lifespan, and allow to cool to room temp before freezing so it doesn't sour in the quick freeze) and you have the perfect base for pasta...lasagna...baked ziti...anything.

The word Balti comes from the northern part of Pakistans province/state known as Gilgit Baltistan. The dish might have travelled to Britain
