Cookie recipe: Makes 12 Whoopie pies
(Can be doubled)
1 cup brown sugar (Packed)
1/2 cup vegetable oil
3/4 cup Pumpkin puree
1 large egg
1/2 teaspoon Vanilla extract
1-1/2 cups all purpose flour
1/2 teaspoon ground Cinnamon
1/2 teaspoon ground Nutmeg
1/2 teaspoon ground Ginger
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Filling recipe (Makes a lot)
1 cup whipping cream
8 ounces of cream cheese (softened)
4 TBS Sour cream
2/3 cup granulated sugar
1 teaspoon Vanilla extract
1 TBS Lemon juice (while optional, it is recommended)
