Italian Olive oil Lemon cake

  • This delicious recipe comes from Marcellina in Cucina. This is the second time I've made it...because it's that good!
    The lemon flavor is just right. It's not overpowering at all, nor is it too weak, but both times I've made it, I have sliced it through the middle and added a lemon pie filling layer . I think it would work very well as a two-layer cake so that's how I plan to make it the next time.
    Here's the recipe:
    3 eggs at room temperature
    1 cup granulated sugar
    3/4 cup extra virgin olive oil (I use light)
    2/3 cup whole milk
    Zest from one lemon, finely grated
    1/4 cup lemon juice
    2 cups all purpose flour
    2-1/2 teaspoons of baking powder
    1/2 teaspoon salt
    Bake in preheated 350 degree oven for 40-45 minutes, or until cake is nicely browned and pulling away from the pan a little bit.

    Looks good. I've got to get a mixer, that looks so much better than a hand mixer.

      That stand mixer is the best! My wife did a best offer on Ebay and got it for about 1/3 the retail price.
