A circle (small or big) divided into six is completely flat. A piece with a straight base (long or short) will stand up vertical. The more curved the arc the more flat the pop-up will be - the more flat an arc the more upright the pop-up will be. The size of the pop-up depends on how wide you set your compass.

I'm delighted that you find the tutorials helpful. Good luck with your book - the main problem with getting pop-up books published is that they are very expensive to produce since all the pieces have to be die cut and then they have to be stuck together by hand.

El Tutorial 18 - Cómo ajustar los pétalos se explica a las 7.00 - 7.10 .... Al dibujar el arco - Cuanto más plano sea el arco, más se levantarán los pétalos. Cuanto más curvas del arco, más pétalos quedarán planos.

That's very difficult - you need to have a very good understanding of pop-up to make a 3D helicopter. If I was going to do it I would probably start with one of the mechanisms explained in tutorials 12, 14, or 28. It would be easiest to just use an easy mechanism to raise up a flat illustrated image.

The book covers the same subjects but in more detail. It should be possible to buy it from Amazon.co.uk - you could also try www.gmcbooks.com - the book was out of print recently but I think there are more available now.
