That depends on the yarn you are using. If it is chunky, then one will be enough, otherwise would attach two together. (Have to make sure also that the yarn doesn't melt in heat, no acrylic.)
Not sure what a shift style jumper is. But this stitch can be used for children's clothes if using fairly fine yarn, otherwise it would be too stiff. Hello from Finland 😊

It could catch slightly easier but not really a difference to stitches that have holes.

I haven't used the jasmine stitch much but check Nordic Yarn Art online, she makes everything in jasmine stitch.
