SEOUL DELISH SERIES: WILD MUSHROOM SEAWEED SOUP 버섯미역국

  • Koreans eat seaweed soup 'miyeok guk' on their birthday. It's because when a mother gives birth to their child, she is supposed to eat miyeok guk to bring her body back to life. It is traditional that new moms eat miyeok guk for days after having her child, and therefore you eat it on your birthday.
    This is a super clean vegan version of the dish. You can use beef, seafood or any protein you really want, but i really love the earthiness of the wild mushrooms and the texture of the tofu in the soup. It's wonderful, and extremely healthy. Seaweed is a super food that is full of calcium, omega acids, iodine, and vitamins- it helps with your metabolism, digestion and blood circulation. Honestly it's seriously a healer and brings you back to LIFE.
    Ingredients
    2 cups dried seaweed
    ALL your veggie scraps- onion, garlic, pepper, radish, mushroom stems, etc.
    1 piece kombu
    1lb choice of mixed wild mushrooms - portobello, cremini, honshimeji, maitake
    1block firm tofu
    soy sauce, to taste
    salt, to taste
    black pepper, red chile for garnish
    Serve with rice, kimchi & banchan

    Hmm...I wonder if I can make this in bulk for meal prep and freeze it. Then defrost when needed.
